BLUEBERRY JELLO SALAD
Steps:
- Bring 4 cups of water to a roaring boil in a saucepan.
- Remove from heat and quickly whisk in the jello and pudding mixes. Add 1/2 cup cold water.
- Pour jello into a glass dish (the larger it is, the thinner the jello layer).
- Add the blueberries throughout the jello.
- Cover with plastic wrap and refrigerate for 4-5 hours.
- After 4-5 hours, beat together softened cream cheese and Cool Whip or whipped cream.
- Spread on top of the jello and sprinkle with the mixed nuts.
BLUEBERRY GELATIN SALAD
This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

- In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
- In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

- In a large bowl, dissolve gelatin in boiling water. Stir in raspberries until thawed. Pour in a greased 8-in. square dish; refrigerate until set., Drain oranges, reserving juice. In small bowl, dissolve orange gelatin in boiling water. In a large bowl, beat cream cheese and reserved juice until smooth. Add gelatin mixture and mix well. Fold in oranges. Pour over raspberry layer; refrigerate until set. , In a large bowl, dissolve lime gelatin in boiling water. Stir in pineapple; cool for 10 minutes. Carefully spoon over orange layer. Refrigerate until set.

- Dissolve one package of gelatin in 3/4 cup boiling water. Stir in 3/4 cup cold water. Spoon into pan and refrigerate until almost set, 45 minutes.
- Dissolve another package of gelatin in 1/2 cup boiling water. Stir in 1/2 cup cold water and 1/2 cup evaporated milk. Spoon over first layer and refrigerate until almost set, 45 minutes.
- Repeat steps 2 and 3 until all gelatin is used. Just before serving, top with whipped topping.
