LEBANESE CHICKEN SHAWARMA

This is a flavorful chicken dish, which I first tasted at a little Lebanese restaurant. While normally shawarma is sliced off a rotisserie, it can be made at home with just a few changes. Be warned, it takes a day of prep time. For lunch, serve as a sandwich in warmed flatbread with cucumber sauce, sliced onion, and seeded tomato. For dinner, serve with rice and lentils (for a treat, look up mujadarrah on this site).

Lebanese Chicken Shawarma image

Steps:

  • Whisk yogurt, lemon juice, olive oil, tomato paste, garlic, cumin, coriander, salt, pepper, and red pepper flakes together in a bowl. Mix in chicken strips. Cover bowl with plastic wrap and place in the refrigerator to marinate, 8 hours to overnight.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Remove chicken from the bowl and arrange in a single layer on a broiling pan. Discard excess marinade.
  • Broil chicken, turning once, until juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Shawarma meat is marinated with Shawarma Rub all night long for better results. Then the meat is placed on a spit on the vertical broiler Shawarma machine in order to cook. Once the meat is cooked it is cut into shavings and the rest of the remainder of the cylinder of meat is kept on the rotating spit cooking until it is finished.
  • There are several ways of serving Shawarma either in Pita bread which is the traditional way, or in a wrap. Another idea for meat lovers who are looking for cutting down on carbs and those who are looking for gluten free meal and do not wish to eat bread it is wise to have meat shavings served on a plate with Tahini drizzle, hummus, tabbouleh, fattoush, tomatoes and cucumber salad and pickles which makes it more attractive.

Steps:

  • Combine yogurt, lemon juice, garlic, pepper sauce, vinegar, onion, black and cayenne pepper, mace, and salt.
  • Add meat and marinate overnight.
  • (at least 12 hours-stir a few times) Grill the meat until done or broil in oven.
  • Combine the tahini, garlic, lemon juice, and parsley.
  • Whisk well.
  • Add water if needed.
  • To make the sandwich slice open a pita, spread some tahini sauce on the bread and add some lettuce and sprouts, tomato, onion and meat.
  • Pour on a little tzatziki and chow down.
