LEMON-CHEESECAKE BALLS

You won't be able to eat just one of our sunny, bite-sized, lemony cheesecakes. They're perfect summer party treats.

Lemon-Cheesecake Balls image

Steps:

  • Line cookie sheet with waxed or parchment paper. In medium bowl, beat cream cheese, lemonade concentrate and powdered sugar with spoon or electric mixer on low speed. Fold in graham cracker crumbs.
  • Using 1 1/2-inch scoop, shape mixture into small balls; place on cookie sheet. Refrigerate 1 hour before serving.

Lemon Cheesecake Cheese Ball Recipe - (4/5) image

Steps:

  • Combine the cream cheese and sugar in a medium bowl. Stir together with a spoon or spatula until well combined and smooth. Mix in the lemon zest and lemon juice until smooth. Transfer the mixture to a piece of plastic wrap and shape into a ball, wrapped tightly. Refrigerate until firm, at least 3 hours. Reshape if necessary once firm. Coarsely crush the graham crackers and transfer the crumbs to a plate or bowl. Roll the cheese ball in the crumbs until evenly coated. Refrigerate until ready to serve.

  • Soften Cream Cheese: Chop cream cheese into cubes, cover and leave on bench for 20 minutes to come to room temperature.
  • Add Ingredients to Food Processor: Add cream cheese, almond meal, honey, coconut, tumeric and lemon. Blitz mixture until it resembles thick cheesecake filling
  • Firm up the mixture: Remove the mixture from the food processor and put into a bowl, cover with plastic wrap and put into freezer for 30 minutes.
  • Roll into 12 balls: Use a spoon or small ice cream scoop to get out portion sized amounts. Shape into a ball, roll in coconut and repeat until round and smooth. Set aside and repeat until done.
