LEMON-MASCARPONE FILLED PANCAKES (EBELSKIVER)

- In the bowl of an electric mixer fitted with the flat beater, beat together the mascarpone and lemon curd until fluffy, 2 to 3 minutes. Cover the filling and refrigerate until ready to use.
- In a bowl, whisk together the flour, baking soda, baking powder, granulated sugar, salt and lemon zest. In a small bowl, lightly whisk the egg yolks, then whisk in the buttermilk. Whisk the yolk mixture into the flour mixture until well combined; the batter will be lumpy.
- In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff but not dry peaks form, 2 to 3 minutes. Using a rubber spatula, gently stir the egg whites into the batter in 2 additions.
- Put 1/2 teaspoons butter in each well of a filled-pancake pan. Set over medium heat and heat until the butter begins to bubble. Pour 1 Tbs. batter into each well. Put 1/2 teaspoons lemon-mascarpone filling into the center of each pancake and top with 1 Tbs. batter. Cook until the bottoms are golden and crispy, 3 to 5 minutes. Using 2 skewers, flip the pancakes over and cook until golden and crispy, about 3 minutes more. Transfer the pancakes to a plate. Repeat with the remaining batter.
- Dust the pancakes with confectioners sugar and serve warm. Makes about 40.

Steps:
- Combine all pancake ingredients in an electric blender and blend at high speed for 30 seconds.
- Scrape down the sides of the blender and blend again for 15 seconds, until the batter is smooth.
- Allow batter to rest at room temperature for 30 minutes before using.
- In a heavy skillet, melt 2 tablespoons butter over moderate heat; saute the onions until they are soft but not brown.
- Add the mushrooms and cook for 10-15 minutes, stirring frequently, until most of the liquid in the pan has evaporated (Do not allow the mushrooms to brown).
- Add the meat and cook, mashing it with a wooden spoon, until all traces of pink disappear.
- Strain through a sieve and discard the liquid.
- In a saucepan, melt the remaining 2 tablespoons butter over moderate heat.
- Add the flour and mix well.
- Pour in the stock and stir constantly with a whisk until the sauce comes to a boil and thickens.
- Reduce the heat to low and let simmer for 5 minutes, stirring frequently.
- Add the lemon juice, nutmeg, salt, and pepper.
- Remove from the heat, and add to the meat mixture; mix well.
- Taste for seasonings.
- Cover loosely with foil to keep warm.
- Heat a heavy 8" skillet over moderate heat until a drop of water steams for 2 seconds before it evaporates.
- Brush the pan with half the melted butter and immediately pour in half the pancake batter.
- Tip the pan gently from side to side to evenly coat the bottom of the pan.
- Cook for 3 to 4 minutes, until the top of the pancake is dry and the bottom is golden brown.
- Remove the pancake to a serving platter using a spatula, putting the "uncooked" side up. Repeat the process to make another pancake. Spread the meat filling evenly over the first pancake and place the second pancake "uncooked" side down on top of the meat mixture.
- Cut into pie-shaped wedges and serve.

- Preheat oven to 180°C (375°F).
- Spray and flour 2 springform or layer tins (24 cm or 9 inch).
- Beat egg yolks with vanilla.
- Add oil, boiling water and lemon juice and continue beating all the time until foamy.
- Add caster sugar and continue beating.
- Lastly add flour, baking powder and lemon rind.
- Beat egg whites with baking powder until very stiff; set aside.
- Fold egg whites into lemon mixture.
- Bake for 20-25 minutes on middle rack of oven.
- Allow to cool.
- Filling: Beat egg yolks with sugar until very thick.
- Add lemon juice.
- Add mascarpone and continue beating until thickened.
- Beat egg whites until stiff.
- Fold into egg yolk and add lemon rind.
- Place mixture in fridge and allow to set.
- Spread 1/2 mascarpone on top of bottom layer of cake.
- Top with other cake and more mascarpone.
- Decorate with grated lemon rind.

- In a fry pan over medium heat, cook the butter, brown sugar, apples, ginger, cloves, nutmeg, cinnamon and lemon juice, stirring frequently, for about 20 minutes.

- To make the cinnamon filling, in a bowl, still together the granulated sugar, flour, cinnamon and salt. Add the butter and, using the back of a spoon, mash the butter into the flour mixture until all of it is absorbed into the butter, forming a paste. Set the cinnamon filling aside.
- To make the cream cheese frosting, in the bowl of an electric mixer fitted with the flat beater, beat together the cream cheese and butter on medium speed until light and fluffy, 2 to 3 minutes. Add the confectioners' sugar, reduce the speed to low and beat until combined, 1 to 2 minutes, stopping the mixer occasionally to scrape down the sides of the bowl. Add 3 Tbs. of the milk and beat until combined, about 1 minute. The frosting should be thick but still pourable; add more milk if needed to thin it. Transfer the frosting to a small bowl; set aside.
