LEMON SUPREME PIE
A friend and I often visit a local restaurant for pie and coffee. When they stopped carrying our favorite lemon supreme pie, I got busy in the kitchen and created this version, which we think tastes even better! - On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , For lemon filling, combine 3/4 cup sugar, cornstarch and salt in a small saucepan. Stir in water until smooth. Bring to a boil over medium-high heat. Reduce heat; add remaining sugar. Cook and stir until thickened and bubbly, about 2 minutes. Remove from heat; stir in butter, lemon zest and, if desired, food coloring. Gently stir in lemon juice. Cool to room temperature, about 1 hour. , For cream cheese filling, beat cream cheese and confectioners' sugar until smooth. Fold in whipped topping and lemon juice. Spread over pie shell., Cover cream cheese filling with lemon filling. Refrigerate pie overnight. , If desired, dollop additional whipped topping over lemon filling. Refrigerate until serving.

- In a saucepan, combine eggs, sugar, butter, lemon juice and zest; cook, stirring constantly, over medium-low heat until mixture is thickened, about 20 minutes. Cool for 20 minutes, stirring occasionally. Pour into pie shell. , In a saucepan, toss blueberries and sugar. Combine the cornstarch and orange juice until smooth; add to blueberries. Cook over medium heat until mixture comes to a boil, about 8 minutes, stirring gently. Cook 2 minutes longer. Cool for 15 minutes, stirring occasionally. Spoon over lemon layer. Chill for 4-6 hours.

- In a large glass bowl, combine lemons, sugar and salt. Cover and let stand overnight at room temperature., Preheat oven to 450°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. cast-iron or other ovenproof skillet. Trim even with rim. In a large bowl, whisk eggs until frothy; lightly brush over crust. Add lemon mixture, flour and vanilla to eggs; mix well. Pour into crust. Roll remaining dough to a 1/8-in.-thick circle; place over filling. Trim, seal and flute edge. Cut slits in top., Bake 15 minutes. Reduce oven setting to 400°. Bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cover edge loosely with foil during the last 10 if needed to prevent overbrowning. Remove foil. Cool on a wire rack; serve warm.

- In a medium saucepan, combine sugar, cornstarch, flour and salt. Gradually stir in water. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat. Gradually stir 1 cup of hot mixture into egg yolks; return all to saucepan. Bring to boil. Cook and stir for 2 minutes. Remove from the heat. Stir in the butter, lemon juice and zest until smooth. Pour into pastry shell. In a bowl, beat egg whites and salt until stiff but not dry peaks are formed. Gradually beat in sugar until soft peaks form. Spread over pie, sealing edges to pastry. Bake at 350° for 12-15 minutes or until meringue is golden. Cool. Store any leftovers in the refrigerator.

wanted to come up with something new for thanksgiving and came up with my own twist on the classic french silk pie

- 1. mix instant pudding and milk as directed on package then mix in 1/2 container of cool whip. pour into graham cracker crust. (there will be a small amount of pudding mix left over) smooth remaining 1/2 of cool whip over filling to edge of crust. add raspberries and white chocolate curls on top and chill for 4 hrs. (may also be served immediately but sets better chilled)

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan with cooking spray or oil.
- In a bowl, whisk together the almond flour, sugar, cornstarch and salt. Scatter in the butter. Using your fingers or a pastry cutter, rub the butter into the flour mixture until the butter is mostly incorporated—the mixture should look sandy and there should still be some small bits of butter. The dough will still seem too dry, but trust me here! Pour the crust into the prepared springform pan and press it evenly over the bottom and up the sides of the pan (using the flat side of a measuring cup helps to get it into the edges). The crust should go about 1 1/4- to 1 1/2-inches up the sides. Bake until golden around the edges, about 15-18 minutes. Let cool completely (you can put it in the refrigerator to cool quickly, if desired).
- Using hand beaters, beat the heavy cream to medium peaks (the cream should hold a point but still look billowy). Add the lemon zest, lemon juice and sweetened condensed milk. Blend on low until fully incorporated. Pour the mixture into the cooled crust (don’t go over the top of the crust—you might not need all of the filling). Cover and refrigerate for at least 6 hours, preferably overnight.
