TUSCAN VODKA LEMONADE WITH ROSEMARY AND THYME SIMPLE SYRUP

Tuscan Vodka Lemonade with Rosemary and Thyme Simple Syrup image

Steps:

  • To make the rosemary and thyme simple syrup, add the granulated sugar, 2 sprigs or the rosemary, 2 sprigs of the thyme and the water to a small saucepan. Turn on the heat and bring to a gentle boil, then stir to dissolve the sugar. Turn off the heat and let it cool. Discard the rosemary and thyme. Store in an airtight container in the fridge for up to 1 month.
  • Add the vodka, lemon juice and 2/3 cup of the rosemary and thyme simple syrup (or more if you like a sweeter cocktail!) into a cocktail shaker with ice.
  • Mix together the superfine sugar and cayenne pepper then spread onto a plate. Run a lemon wedge around the rim of each glass and dip into the sugar and cayenne mixture. Fill each glass with ice, then divide the vodka lemonade between the 2 glasses. Garnish each glass with a sprig of rosemary and a sprig of thyme. Enjoy!

1 cup granulated sugar

4 ounces vodka
Juice of 2 lemons, plus more for the glass rim
Ice
2 tablespoons superfine sugar
Pinch cayenne pepper

Steps:

  • Preheat oven to 325°F. and generously butter and flour a madeleine pan (preferably non-stick), knocking out excess flour.
  • In a bowl whisk together flour, baking powder, salt, zest, and thyme.
  • In another bowl with an electric mixer beat together butter, lemon juice, and sugar until mixture is light and fluffy. Beat in eggs, 1 at a time, beating well after each addition, and add flour mixture, beating until just combined.
  • Spoon some of batter into prepared madeleine molds and with a spatula smooth surfaces, scraping back and forth over molds and returning excess batter to bowl. (This will eliminate any air pockets and ensure that molds are not overfilled.) Wipe excess batter from edges of pan.
  • Bake madeleines in middle of oven 20 to 25 minutes, or until edges are browned and tops are golden. Loosen edges and transfer madeleines to a rack set over a baking dish. Make more madeleines in pan, cleaned, buttered, and floured, with remaining batter in same manner.
  • While first batch of madeleines is baking, in a small saucepan bring syrup ingredients to a boil, stirring, and remove from heat.
  • Brush warm madeleines with some of hot syrup and repeat with remaining madeleines as they are baked, keeping syrup warm.

2 sticks (1 cup) unsalted butter, softened
2 teaspoons fresh lemon juice

Steps:

  • In a small saucepan, combine 2 cups water with the sugar and thyme; bring to a boil over high heat, stirring occasionally, until sugar has dissolved. Remove from heat; let cool to room temperature.
  • Pour mixture through a fine sieve into a large glass measuring cup; discard thyme. You should have 2 cups syrup. Cover with plastic; chill.
  • In a large serving pitcher, stir together lemon juice, vodka, and chilled syrup; garnish with thyme. Divide evenly among eight tumblers filled with ice; serve immediately.

Steps:

  • In 1-quart saucepan, heat lemon-thyme simple syrup ingredients over low heat until sugar is dissolved. Let stand 15 minutes. Strain to remove thyme and lemon peel. Use within 2 days.
  • Place 1 sprig fresh thyme in cocktail shaker. Add vodka, cranberry juice, 1 oz of the lemon-thyme simple syrup and liqueur; muddle thyme with back of spoon. Add ice; place lid on shaker, and shake until cold and blended. Strain into 2 martini glasses.
  • Garnish with lemon slice and sprig of thyme.

  • In a medium saucepan, bring sugar, thyme, and 1 cup water to a boil; stir until sugar is dissolved, about 2 minutes.
