  • Low-Sodium Recipe
  • 1. Heat grill or a cast iron grill to medium heat. Spray with cooking spray.
  • 2. Toss chicken breasts with olive oil, Mrs. Dash® Lemon Pepper Seasoning Blend, half of lemon juice and slivered garlic cloves.
  • 3. Grill the chicken on both sides, turning at least three times to cook evenly.
  • 4. Remove to a plate. Cover 3-4 minutes to let juices rest.
  • 5. Squeeze other half of lemon on chicken.

Steps:

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook as the label directs. Drain, reserving about 1/2 cup cooking water.
  • Meanwhile, melt the butter in a skillet over medium heat. Add the shallot and a pinch of salt and cook, stirring occasionally, until lightly golden, about 3 minutes. Whisk the cream, egg yolk and lemon zest in a bowl. Reduce the heat to low and add the cream mixture and cheese to the skillet. Cook, whisking, until slightly thickened, about 2 minutes. Season with salt and 2 to 3 teaspoons pepper.
  • Add the pasta to the skillet and toss, adding enough of the reserved cooking water to loosen the sauce. Divide among bowls and garnish with more pecorino. Serve with crusty bread, if desired.

  • Pre-heat oven to 350*. Spray a 8x4x2" loaf pan with cooking oil spray.
  • Combine eggs, oil and 3 tablespoons lemonade concentrate.
  • In separate bowl, combine flour, sugar and baking powder; add to egg mixture alternately with milk.
  • Pour into prepared loaf pan.
  • Bake 55-65 minutes, until a toothpick comes out cleam.

This quick bread says "spring" to me. It's a little sweet and peppy, with a bright lemony taste and is heavenly slathered with real butter. Delicious with seafood and spring's fresh-tasting vegetable dishes. It's one of my favorites from the Silver Palate cookbooks; the original recipe also includes chives, but I just didn't care for their oniony taste in this bread and so I've omitted them. Steps:

  • Preheat oven to 350 degrees F.
  • Cream together butter and sugar.
  • Add egg yolks one at a time, beating well after each one.
  • Stir in lemon juice and zest.
  • In another bowl, combine flour, baking powder, and black pepper.
  • Stir 1/3 of the mixture into butter mixture.
  • Add 1/3 cup of the milk and mix together.
  • Continue alternating milk and remaining flour.
  • Do not overmix.
  • In another bowl, whip egg whites with the pinch of salt until soft peaks form.
  • Fold egg whites into the batter, then pour batter into a greased 9x5x3 inch loaf pan and bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in the center comes out clean.
  • Remove from oven, allow to sit in pan for 5 minutes, then remove bread and cool on a rack.

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C). Line a baking sheet with parchment paper.
  • Wash and dry the lemons. Peel away the zest from both lemons using a vegetable peeler, making sure not to get any of the pith. Spread out peels in a single layer on the prepared baking sheet.
  • Bake in the preheated oven until the peels have curled up and dried, about 30 minutes. Turn off oven and allow lemon peels to cool inside turned off oven, propping the door open with a wooden spoon to allow moisture to escape, about 20 minutes.
