Coconut-Lime Marinated and Grilled Shrimp image

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Top with the sliced scallion and serve with the reserved lime wedges.

Steps:

  • In a blender or food processor place the cilantro leaves and stems, scallions, chilies, garlic, lime juice, cumin, and turmeric.
  • Puree, adding a little water if necessary to achieve the desired consistency.
  • Peel the shrimp, leaving the tail intact.
  • Devein them, place them in a bowl, and toss with the cilantro puree.
  • Marinate for 8-12 hours.
  • Prepare a moderately hot charcoal fire.
  • When ready to cook, scoop up the shrimp so that more of the marinade remains on one side of each one.
  • Place the shrimp marinade-side up pon the grill.
  • Cook until almost done, about 2 minutes.
  • Turn shrimp over and cook quickly on marinade side, about 1 minute.
  • Remove shrimp from grill.
  • Divide shrimp among serving plates.
  • Pass garnishes at table.
  • Each guest should sprinkle the shrimp with coarse salt, pepper, chili powder, a squeeze of lime juice, and a few cilantro leaves.

  • Combine olive oil, vinegar, honey, lime juice, salt, pepper and garlic together to make marinade. Marinate shrimp for about 30 minutes or more if desired, then drain marinade into a cup and save to make glaze after cooking shrimp.
  • Heat grill pan to medium, grill shrimp for a total of 3 minutes, turning over once. Remove shrimp from pan and cover to keep warm.

  • Preheat grill to medium-high.
  • In medium bowl, combine all ingredients except shrimp and stir well.
  • Peel shrimp except for tail, and devein. Rinse and pat dry with paper towels.
