LINDA'S FAKE AND BAKE CHICKEN

This is one of my most requested recipes. It is the best 'non-fried' chicken recipe that I've tasted. Chicken is battered and breaded, but then baked instead of fried.

Linda's Fake and Bake Chicken image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a shallow baking dish with cooking spray.
  • In one bowl, stir together the cornflake crumbs, bread crumbs, salt, garlic powder, onion powder and paprika. In another bowl, whisk together the evaporated milk, egg, lemon juice and butter using a fork.
  • Dip the chicken pieces in flour, and shake off the excess. Dip into the milk batter, then into the crumb mixture. Place pieces in a single layer in the greased baking dish. Spray the top of the chicken with cooking spray.
  • Bake uncovered for 1 hour in the preheated oven, until nicely browned, and juices run clear.

  • Mix all ingredients except 1/2 cup cheese. Place in greased casserole.
  • Top with remaining cheese.
  • Bake at 350°F for 45 minutes.

  • Place the first eight ingredients in a blender; cover and process until blended. Pour 2 cups marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight. Cover and refrigerate remaining marinade. , Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat 40-45 minutes or until juices run clear, turning occasionally and basting with reserved marinade during the last 15 minutes.

Linda's Italian Baked Chicken image

Steps:

  • Clean chicken. You can opt to keep the skin on or take it off.
  • If you keep the skin on:.
  • Pull skin back on each breast, and take 1 teaspoons garlic, and rub it into the skin of each breast.
  • Sprinkle each breast with 1/2 teaspoons of Italian Seasoning.
  • Pull skin back over chicken, and cover each breast with 1 teaspoons bread crumbs, and place in pan.
  • Salt and pepper, to taste.
  • Drizzle oil or spray with I Can't Believe It's Not Butter, all over the top.
  • Bake at 350, for 50-60 minutes, until juices run clear.
  • If you take the skin off:.
  • Put chicken pieces in baking pan.
  • Put 1 teaspoons garlic on each breast, and rub around.
  • Sprinkle with 1/2 teaspoons Italian Seasoning, salt, and pepper.
  • Sprinkle 1 teaspoons bread crumbs over each chicken breast.
  • Drizzle oil or I Can't Believe It's Not Butter over all the breasts, and bake at 350, for 50-60 minutes, until juices run clear.

Steps:

  • Place chicken in a large skillet and pour in enough water to cover; add Parmesan cheese and 2 chopped cloves of garlic. Bring water to a boil and cook until chicken is no longer pink in the center, about 28 minutes. Remove skillet from heat, reserving 1/2 cup water mixture from the skillet. Transfer chicken to a work surface and shred using 2 forks.
  • Combine onion, green chile peppers, and 1 chopped clove of garlic in a pot; add cream cheese and 1 cup Mexican cheese blend. Cook and stir mixture over medium heat until cream cheese is melted, 3 to 4 minutes. Slowly pour the reserved 1/2 cup water mixture from chicken over cream cheese mixture, while continuously stirring until mixture is smooth. Remove pot from heat and stir shredded chicken into cream cheese sauce.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a skillet over medium-low heat. Place tortillas in the hot oil, working in batches, until warmed, about 30 seconds per side. Spoon 1 to 2 tablespoons cream cheese-chicken sauce down the center of each warmed tortilla; roll tortilla around filling.
  • Pour enough green enchilada sauce to cover the bottom of a 9x13-inch baking dish. Arrange filled tortillas in the enchilada sauce. Pour remaining enchilada sauce over filled tortillas.
  • Mix sour cream and milk together in a bowl until thin enough to pour. Pour sour cream mixture over filled tortillas; top with remaining Mexican cheese blend.
  • Bake in the preheated oven until heated through and cheese is melted and bubbling, 20 to 25 minutes.

SUN-DRIED TOMATO AND HERBED/CHEESED BAKED ORZO

This is a wonderful infusion of sweet sun-dried tomatoes, garlic, shallots and fresh herbs and cheese with wonderful orzo, baked to perfection with a simple parmesan/bread crumb topping. I saw a version of this on The Food Netwook, and adapted it to suit what I had in my pantry and it turned out very flavorful.

Sun-Dried Tomato and Herbed/Cheesed Baked Orzo image

Steps:

  • Heat olive oil and butter over medium/high heat in saucepan til hot. Add shallots and cook til translucent, but not brown. Add chopped sun-dried tomatoes. Cook 1 minute more, stirring and moving mixture around constantly. Add garlic, cooking one minute more. Be careful at this point not to burn garlic or all will be ruined.
  • Add 1 cup orzo to saucepan, constantly stirring and toasting the pasta for 1 to 2 minutes. Add chicken broth, and crank heat up to high to bring to a boil. Add salt and pepper for seasoning, being careful not to over-salt, as parmesano reggiano has a high salt content. When boil is reached, cover and reduce to simmer and cover til most of liquid is absorbed. You want SOME liquid to remain.
  • Transfer to a bowl. Add fontina cheese and 1/4 cup parmesan, basil and parsley. Add cream. Stir well. Transfer to 2-quart buttered/greased ramekin or equivalent and cover the top with the mixture of Italian seasoned bread crumbs and remaining 1/4 cup reggiano cheese.
  • Dot top with bits of butter and bake in 375 oven for approximately 30 minutes.
  • Serve immediately, grating more reggiano over dish if desired.

  • Brown beef, add mushrooms, garlic and oregano.
  • Stir fry until mushrooms are light browned.
  • Add spinach, heat until thawed and almost all juices have cooked away, about 10 minutes.

LINDA'S CHICKEN FANDANGO

Created for RSC #11. Creamy pasta in a luscious wine sauce, with grilled chicken pieces and flavors of shallots, sun-dried tomatoes, spinach, mushrooms, and tarragon. During the final stage Asiago cheese is added to bring it all together, and make this a dish to remember. Serve in large bowls, so you can get lots of sauce for dipping your bread into. May I suggest a nice crusty Italian or French bread, and a nice white wine to accompany this lovely dinner? I used dry Marsala wine for this dish. I also used a George Foreman grill to do the chicken. It is fine to use whole wheat pasta.

Steps:

  • Turn the grill on, and set it at 360°F.
  • Put 5 quarts water on to boil for pasta in a large pot. When water is boiling add the 1 T. salt, then add the fettuccine. Cook according to directions on box. Drain well, and set aside. Cover.
  • Once temperature is up to 360°F, place the chicken on the grill top and close the cover. Cook 15-20 minutes. Test with a knife to see if it is cooked all the way through. When chicken is done, cut it into thin strips horizontally (long way), then into 1" pieces. Set aside.
  • Chop shallots, spinach, mushrooms and sun-dried tomatoes, and put in separate dishes.
  • Add 3 oz. of butter flavored oil to a lg. skillet. Heat over high heat and add shallots, then turn down to medium, and let the shallots caramelize, stirring once in awhile, so they don't burn (about 5-7 minutes).
  • When shallots are done add spinach, mushrooms, sun-dried tomatoes, grilled chicken, tarragon, salt and pepper. Saute for 1-2 minutes.
  • Add the white wine, and saute for 2 minutes.
  • On medium heat, add the half and half/cream. Let simmer for a few minutes, stirring to incorporate everything. (You don't want the heat too high, or the half and half/cream may curdle). Set aside.
  • Run hot water over the cooked pasta for 10 seconds, to heat. Drain thoroughly.
  • Put pasta in the saute pan, and using tongs, mix pasta until well incorporated and covered with sauce. Place briefly over low heat to make sure it's heated through. Take off burner.
  • Add Asiago cheese, and continue to toss until cheese is completely mixed in with the pasta and sauce.
  • Transfer to a large serving bowl with all the juices, and sprinkle with chopped parsley.
  • Serve in large spaghetti bowls with lots of sauce so you can dip your bread in and savor the juices.
