Need something fast? Here you go...Oh, it can be done without the peppers too. Fry a sausage next to it if looking for something more consistent. Or slice it and add it to it, like my mom used to do.These days she doesn't eat a lot of potato paprikash,though.

Steps:

  • In a heavy bottomed casserole, heat the oil and fry the onions and garlic. Add the caraway seeds, paprika, and water.
  • Add the potatoes, peppers and tomatoes.
  • Simmer for 30 minutes.

Steps:

  • Preheat oven to 400 degrees.
  • Pour oil into a roasting pan and heat in the oven for 10 minutes. Remove pan from oven.
  • Spread potatoes over the bottom of the pan.
  • Return to oven and roast, uncovered, for1 hour, until the potatoes are crisp on the outside and tender inside.
  • A few times during the baking, shake the pan to toss the potatoes so they brown evenly.
  • Add caraway seeds and butter and mix well to melt the butter and coat the potatoes with the seeds.
  • Season with salt and pepper to taste. --.

Cheesy Mashed Potatoes image

Steps:

  • Place the potatoes, rosemary and garlic in a large saucepan and cover with cold water. Add a handful of salt and bring to a boil over medium-high heat. Boil until fork-tender, about 15 minutes. Drain well and remove the rosemary sprigs.
  • Working over the same saucepan, press the potatoes and garlic through a potato ricer. Add the warmed cream and olive oil. Place the pan back over low heat and stir everything together using a rubber spatula. Add the mozzarella, Parmesan and 1/2 teaspoon salt and continue to stir until the mixture is hot, the cheese is melted and the potatoes are almost stringy in texture--this will take 5 to 10 minutes. Serve hot.

I'm opening a series of Romanian soups,especially sour soups called Chiorba or Borsh.Very popular here, some people eat them everyday. This one is called Chiorba de perisoare. I mentioned that it's optional the sour cream & egg yolks step. It makes the soup richer, even if you skip it the taste is still good.

Littlemafia's Romanian Meatballs Soup image

Steps:

  • To make the meatballs, mix together all the ingredients. Then take a little of this mixture and make little balls (the size that you like - my mom makes them quite big while I prefer them small).
  • Fry the chopped onion in oil .
  • Add the chopped or grated onion,carrot,parsley and celery root.
  • Add the water , salt and leave to boil for 10 - 15 minutes, then add the meatballs to the soup, one by one.
  • Simmer until the meatballs rise - about 30-45 minutes .
  • Add the parsley .
  • Turn off the heat and cover for 15 minutes.
  • This step is optional :In a separate bowl, mix 2 egg yolks with the sour cream. Add the egg/sour cream mixture into the soup.
  • To season the soup add fresh lemon juice - adjusting to taste.
  • Add the chopped parsley,the celery and the lovage leaves.
  • Serve with sour cream.
