- Bring 2/3 cup water to a boil, remove from the heat and add 1 Earl Grey tea bag and 1/2 teaspoon dried lavender (optional). Cover and steep 5 to 8 minutes. Combine 1 1/2 teaspoons sugar and 1/4 teaspoon vanilla in a mug; strain the tea into the mug and stir. Heat 2/3 cup milk with a frother; pour into the mug, spoon the froth on top and sprinkle with more dried lavender, if desired.

- In a medium pot, simmer the tea, lavender, cream, milk, sugar and salt until the sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk the yolks until they're broken up.
- Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170F on an instant-read thermometer).
- Cool to room temperature. Strain through a fine-mesh sieve into a bowl and discard the tea bags and any scrambled egg bits that get caught in the sieve. Press out any liquid that might be held in the tea bags back into the custard. Stir in the gin.
- Cover and chill at least 4 hours or overnight. If the ice cream base separates while it’s chilling, mix it back together and you’re good to go.

- Combine the heavy cream and loose leaf tea in a saucepan and set on medium heat. Stir from time to time, the tea will release its flavour and colour as the cream warms. Remove from the heat just before it reaches boiling temperature. Transfer the saucepan to an ice water bath to cool to room temperature. When the mixture has cooled down, strain the cream to remove tea leaves and place in the fridge/freezer to chill completely. If chilling it in the freezer, make sure to stir it and check that it cools homogeneously and does not begin to freeze on the surface and bottom.
- When the tea-flavoured cream has cooled to fridge temperature, cut the vanilla bean pod in half and scrape the beans down into the cream. Whip the cream using an electric mixer. The cream needs to be whipped to hard peaks, making sure not to overbeat it.
- Pour the condensed milk into the whipped cream and fold it in. Pour the ice cream mixture into a container and place it in the freezer. Allow about 5-6 hours in the freezer to set before serving.
