Steps:

  • Position a rack in the middle of the oven and preheat to 350°F.
  • Make the glaze and pineapples:.
  • In a small saucepan over moderate heat, combine the brown sugar and 1 cup rum, and bring to a simmer. Continue simmering, stirring occasionally, until reduced by about 1/3. Whisk in the butter. Add the pineapple slices, gently stirring to coat them in the glaze, then let them sit for about 3 minutes. Transfer the pineapple slices to the bottom of a 9-inch square cake pan, arranging them to cover the bottom. Save the rum glaze for serving.
  • Make the cake:.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on high until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat on medium until fully incorporated. Add the vanilla and rum, and beat for 30 seconds. Fold in the flour and salt. Scrape the batter (it will be thick) over the pineapples in the pan. Sprinkle the pecans over the batter and bake until a tester inserted in the center comes out clean, about 1 hour and 10 minutes. Let the cake cool on a rack for 15 minutes then flip it onto a serving plate so that the pineapples are on top.
  • Note, this cake can be baked in advance, covered, and kept at room temperature up to 10 hours.
  • To serve:.
  • In a small saucepan over moderate heat, combine the rum glaze and the remaining 1/2 cup rum and warm until heated through. Cut the cake into squares and serve with vanilla ice cream and warm rum glaze.

Steps:

  • Preheat the oven to 350°F (175°C). Coat a 10-cup (2.5-liter) Bundt cake or tube pan with butter or nonstick cooking spray, dust it with flour, and tap out any excess.
  • To make the cake, into a medium bowl, sift together the flour, baking powder, baking soda, 3/4 teaspoon salt, and the nutmeg.
  • In a stand mixer fitted with the paddle attachment (or in a bowl by hand), beat together the 1 cup (8 ounces/225 g) butter and 2 cups (400 g) granulated sugar on medium speed until light and fluffy, 3 to 5 minutes.
  • In a small bowl, beat together the eggs, egg yolks, and vanilla. With the mixer running, slowly dribble the egg mixture into the butter mixture, stopping the mixer and scraping down the sides of the bowl as needed, until the eggs are completely incorporated. (The mixture may look curdled, which is normal.) Gently stir in one-third of the flour mixture, then about half of the 3/4 cup (180 ml) coconut milk. Mix in about half of the remaining flour mixture, followed by the remaining coconut milk. Finally, gently stir in the remaining flour mixture just until combined.
  • Scrape the batter into the prepared pan and bake until the cakes feels just set in the center, 55 to 60 minutes.
  • While the cake is baking, make the coconut-rum syrup. In a medium saucepan, warm the 3/4 cup (180 ml) coconut milk and the 6 tablespoons (75 g) granulated sugar, stirring until the sugar dissolves. Remove from the heat and add the 1/2 cup (125 ml) rum.
  • When the cake comes out of the oven, leave it in the pan and poke it with a wooden skewer about 60 times. Spoon about two-thirds of the coconut-rum syrup over the cake, letting it soak in gradually. Let the cake cool completely.
  • Invert the cake onto a cake plate. Brush or spoon the remaining coconut-rum syrup over the cake.
  • To make the glaze, in a small saucepan over high heat, bring the 4 tablespoons (2 ounces/60 g) butter, the cream, brown sugar, and pinch of salt to a boil. Cook, stirring to dissolve the sugar, for 1 1/2 minutes. Remove from the heat, stir in the 1 tablespoon rum, and let cool completely. Once cool, stir in the toasted coconut.
  • Spoon the glaze over the top of the cake, encouraging it to run down the sides of the cake (if the glaze seems too thick, rewarm it slightly).
  • Storage
  • The cake can be stored at room temperature for up to 4 days, preferably under a cake dome.

Cake
3 cups (420 g) all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda

1 tablespoon vanilla extract
3/4 cup (180 ml) canned Thai coconut milk
Coconut-Rum Syrup
3/4 cup (180 ml) canned Thai coconut milk
6 tablespoons (75 g) granulated sugar
1/2 cup (125 ml) dark rum
Glaze
4 tablespoons (2 ounces/60 g) unsalted or salted butter, cut into pieces
6 tablespoons (90 ml) heavy cream
6 tablespoons (90 g) dark brown sugar
Pinch of salt
1 tablespoon dark rum
1/2 cup (40 g) dried large-flake coconut (unsweetened or sweetened), toasted

Steps:

  • Preheat oven to 325 degrees. Blend the first 6 ingredients then beat on high for 6 mins.
  • Pour batter into a non stick Bundt Pan (I still spray lightly with Baker's Joy before I add batter)
  • Bake in a pre-heated oven on middle rack for 40 to 45 minutes. Top should be golden brown. Remove from oven.
  • While cake is still hot add topping ingredients to a small saucepan on a med heat. Bring to a boil and let rapidly boil for a couple minutes, while stirring. Watch carefully so it doesn't boil over. Take a large fork (with 2 tines) and poke holes in still hot cake. Slowly pour or spoon topping over entire hot cake and leave in bundt pan until all the liquid is absorbed. Then turn cake upside down on serving plate. Sprinkle with powdered sugar or decorate with fresh fruit. Very rich, so easily cut into 16 servings. Even better if cake is still a little warm. A crown pleaser for sure. (make sure everyone knows there is alcohol in cake in case of sensitivites) Enjoy!

1 box(es) pineapple cake mix, pudding in the mix.
4 - whole eggs
1/2 cup(s) water
1/2 cup(s) mango rum
3/4 cup(s) choppen pecans (optional)
1/2 cup(s) oil (or) applesauce
- below for the topping
1/2 cup(s) mango rum (or you can cut to 1/4 c rum and 1/4 c water)
1 cup(s) sugar or substitute (splenda, agave etc)
1 stick(s) butter

RUM CAKE

Not sure where the recipe is originally from, but it is very intoxicating. Great for a Carribean or Tropical theme...Good for potlucks (not church or job related ones). Best if made the day before and refrigerated. Guessed on prep time and servings...depends on how big you slice the bundt cake and how long you wait between applications of the glaze.
