Steps:

  • Heat broiler.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes.
  • Add the tomatoes, spinach, vinegar, sugar, oregano, basil, salt and pepper. Simmer 10 minutes.
  • Season fish. Brush with oil.
  • Broil 8 minutes, turning once.
  • Place mesclun on plates. Top with fish and sauce. Serve immediately.

Steps:

  • Heat oven 350.
  • Place cod in a deep skillet.
  • Ad bay leaf. Cover with wine. Poach cod until just cooked. Drain. Flake. Set aside.
  • Boil potatoes and greens until tender. Drain.
  • Heat oil in a skillet.
  • Add onions. Saute 10 minutes or until golden.
  • Add tomatoes. Saute 5 minutes. Season.
  • In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
  • Pour oil over top.
  • Bake 1 hour.
