LOUISIANA ROAST BEEF

This is one of the Zaar recipes that I adopted. I hope to prepare this one soon and will post any modifications that I make to the recipe.

Louisiana Roast Beef image

Steps:

  • In a small bowl combine the onions, celery, bell peppers, butter and seasonings, mix well.
  • Place roast in a large roasting pan, fat side up.
  • With a large knife make 6 to 12 deep slits in the meat (to form pockets) down to a depth of about 1/2 inch from the bottom; do not cut all the way through.
  • Fill the pockets to their depths with the vegetable mixture, reserving about 1 tablespoon of the vegetables to rub over the top of the roast.
  • Bake uncovered at 300F until a meat thermometer reads about 160F for medium doneness, about 3 hours.
  • For rarer roast, cook until thermometer reads 140F.
  • Serve immediately topped with some of the pan drippings if you like.

Pan Roast Louisiana Blackfish with Corn, Crab and Caviar image

Steps:

  • In a shallow bowl, combine Parmesan cheese and flour. Lightly score the skin side of the fillets several times to form a cross hatch pattern without cutting into the flesh of the fish. Season the portions of the blackfish with salt and a touch of lemon juice. Dredge the seasoned fish into the Parmesan/flour mixture.
  • In a large heavy skillet over medium heat, add olive oil. Add fillets, skin side down. Cook until skin is crisp, about 4 minutes. Flip fish and cook until fish is just cooked through, about 2 minutes. Once the fish is cooked, remove it from the pan and place on absorbent towels to rest in a warm place for a moment, while the plate is being composed.
  • To serve, remove the Silver Queen Corn Pudding from molds and place into large, shallow bowls. Over the warm pudding, place a portion of fish. Over the fish, spoon on the Saute of Crab and Baby Corn. Carefully pour a small ladle of Silver Queen Foam around the fish. With 2 demitasse spoons, form the caviar into quenelle or egg shapes and place over the fish next to the bed of corn and crab. Lightly garnish the fish with chives, chive blossoms, dill and chervil.
  • Preheat oven to 275 degrees F.
  • In a 4 quart saucepan, bring cream and corn to a boil. Reduce heat and simmer until corn is tender, about 5 minutes. Pour mixture into a blender and blend until smooth, season to taste with salt and cayenne pepper. Strain the mixture through a fine strainer into a bowl.
  • In another mixing bowl, beat the eggs. Slowly pour the hot corn mixture into the eggs, whisking constantly to avoid curdling the eggs. Pour the custard into individual custard cups or molds, preferably nonstick. Place the molds in a roasting pan and pour hot water in the pan to come halfway up the sides of the mold. Bake until custards are just set, about 20 minutes.
  • In a medium skillet over medium-high heat, melt butter. Add crab and corn, cook, stirring, until mixture is just heated through, about 2 to 3 minutes. Stir in lemon juice, remove from heat and season with hot pepper sauce and salt.
  • Cut lemongrass into 2-inch pieces and bruise with the back of a knife. Place lemongrass in a piece of cheesecloth and tie closed.
  • Combine lemongrass, stock and corn in a saucepan. Gently bring to a boil, simmer 15 minutes, remove from heat and let steep 15 minutes. Remove cheesecloth, puree mixture in blender, and pour through a fine strainer, pressing on the solids to extract as much flavor as possible.
  • When ready to use, bring the broth to a boil, season to taste with salt, whisk in butter and froth with a hand-held immersion blender.

10 eggs
2 tablespoons butter
1 1/2 pounds jumbo lump crabmeat, picked over
6 ears fresh baby corn, blanched and sliced into rounds
1 teaspoon lemon juice
Hot pepper sauce
Sea salt
2 stalks lemongrass
2 cups fish stock or fumet
1 cup Silver Queen corn kernels

  • Preheat oven to 350°. Place flour in oven bag; shake to coat. Place oven bag in a 13x9-in. baking pan or larger roasting pan. Sprinkle chicken with salt and cayenne pepper; place in bag. , Surround chicken with onions, potatoes, carrots and green peppers. Steps:

  • In a Dutch oven or large heavy pot, heat half of the butter over medium-high heat. Add the flour, reduce the heat to medium, and cook, stirring constantly with a large wooden spoon, to make a thick roux almost the color of milk chocolate, 15 to 20 minutes. Add the onions and celery seed, cook, stirring, for 1 minute. Add the garlic and bay leaves, and cook, stirring, for 30 seconds. Place the tomato paste in a small bowl and whisk in the sherry to blend. Add to the pot, and cook, stirring, for 30 seconds. Add the stock, and whisk to blend. Add the tomatoes and their juices, the sugar, salt, black pepper, and red pepper, and cook, stirring, occasionally, for 20 to 25 minutes. Add 2 cups of the court-bouillon and bring to a simmer. Season the shrimp, crab meat, and oysters with Creole Seasoning. Add the shrimp and cook for 3 minutes. Add the oysters and cook until the oysters curl, 1 to 2 minutes. Add heavy whipping cream and boil for 1 minute. Add last 4 oz. of butter. Divide equally between 2 large soup bowls, and repeat with the remaining ingredients in 2 batches. Spoon 1/2 cup of rice into the center of each bowl and serve immediately. Creole Seasoning: 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried leaf oregano 1 tablespoon dried thyme Combine all ingredients thoroughly and store in an airtight jar or container. LOUISIANA - PIG ROAST

The art of roasting a pig (whole or part) differs widely.Well seasoned and juicy it disappeared as fast as I could slice it! You don't need a whole pig to enjoy this dish, just buy a fresh picnic, regular fresh ham, or, a boston butt roast. Roasting can be done on the pit or even in the oven given the size of the roast! I know most of you won't roast a whole pig so I'll write this recipe for application to roasts.You will have to prepare the meat the day before you cook it. Allow at least 8 hours to marinate and 4 hours to cook for a 5 lb. roast (bigger = longer, 45 minutes per pound on average)The most important things are seasoning and juiciness as pork is, by nature, a dry meat. Pork is dry because the meat itself has little or no fat in it, it's mostly just surrounded by fat.

Steps:

  • Prepare the meat:.
  • Trim the roast leaving just a little fat on it.
  • Prepare the meat:.
  • Mix all the ingredients above except the Mustard. Bring mixture to a boil then let cool stirring every few minutes to release the seasonings.
  • Draw mixture into an injector and inject the roast putting the needle as close to the center of each muscle as you can (doesn't have to be perfect). Rub the outside of the roast with mustard then sprinkle a little Old Bay seasoning all over it.
  • Put the roast in a zipper lock bag or in a covered bowl. Put it in the fridge overnight (at least 8 hours).
  • Light the pit and get a nice hot fire going. Add a bunch of soaked hardwood chips to the fire. Put the roast right over the fire. Let the roast get dark brown all over. Take it off the fire and put it in a covered pan. Use a disposable aluminum pan if you're going to finish it on the pit.
  • Note: You have a choice here, you can finish it on the pit, or, in the oven. What's nice about this is that you can take care of the browning, remove it, and continue to barbecue other things.
  • In the oven, set the roast in a pan and broil it until the browning completes.
  • Now, here's the juiciness trick. Add about 3/4 cup of water to the pan, or, keep enough water in the pan to cover the bottom. Cover it well with aluminum foil and, on the pit, set it off to the side away from the fire. Note: The heat should be at least 275ºF in this section of the pit. Check the water content every half hour and flip the roast each time. In the oven set the temp to 275ºF and do the same.
  • When is it done? Use a meat thermometer and test the thickest part of the roast, 160ºF is where you want it. Here's where you have a choice. You can take it out and slice it now, or, continue to let it cook. If you continue to let it cook the muscle sections will begin to pull away from each other, and become more and more stringy. It is more apt to be dry so you must baste it from here on out. If it gets too dry you won't get the moisture back in the meat immediately, you'll only have dry meat in a sauce.
  • As you slice it dredge it in the liquid, or just leave it in the liquid. Taste the liquid to see if it needs any seasoning.
  • After the first few taste testers visit be careful with the knife so you don't wind up with additional finger food.
