THE BEST EASY BEEF AND BROCCOLI STIR-FRY

I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

The Best Easy Beef and Broccoli Stir-Fry image

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

  • -In a 10" skillet or wok heat the oil;add the prepared vegetables.
  • -Cook,stirring quickly& frequently until vegies are crisp tender& onions are browned.
  • -Stirin the beef strips,cook till desired doneness.
  • -Ina small bowl, combine the remaining ingredients, stirring to dissolve the cornstarch; add to the beef mixture& cook stirring constantly until sauce is thickened, 2-3 minutes.

1/2 cup onion, wedges
6 ounces sirloin steaks, boneless,strips
1 1/2 tablespoons chicken broth

  • Cook Broccoli: Add broccoli florets and beef broth to now-empty pan. Stirring occasionally, simmer until broccoli is tender, about 10 minutes. Meanwhile, proceed to next step to prepare sauce.
  • Make Sauce: Add all sauce ingredients to saucepan. Stir together over medium-low heat until starting to simmer, about 5 minutes. Keep sauce warm over low heat while waiting for broccoli to cook.
  • Finish & Serve: Once broccoli is tender, return beef to pan and pour sauce on top. Stir until everything is coated with sauce. Bring to simmer and cook for a few minutes. Serve (Note 7).
