LOW CARB COATING FOR PORK, CHICKEN OR VEGGIES, NO PORK RINDS

Made this up to put on chicken breasts to make a "mock" chicken parmesan. Loved the results. Can use for pork chops, veggies, etc. Good with sweet potatoes.

Low Carb Coating for Pork, Chicken or Veggies, No Pork Rinds image

Steps:

  • In a shallow dish combine soy flour, salt, pepper, and garlic powder; mix well.
  • In another shallow dish, mix beaten egg and milk together.
  • In yet another shallow dish, mix parmesan cheese and parsley.
  • STEP ONE: Dredge your meat in the soy flour mixture, knocking off all "excess" flour.
  • STEP TWO: Dunk meat with soy flour mixture on it into the egg mixture, make sure there is egg on the whole thing.
  • STEP THREE: Roll meat in the parmesan cheese mixture.
  • Place on a foil covered baking sheet, make sure not to crowd it and place in the oven according to what kind of meat you're cooking.
  • Chicken breasts--about 20-25 minutes; pork chops--about 30 minutes, depending upon thickness.
  • Veggies are variable.

Okay, so most veggies out there probably don't crave pork rinds. However, these are a great, light, and tasty veggie friendly chip (for carnivores and veggies alike!) Fat free, high in protein, and delicious! (Gluten free too, if you get the right poppadoms!) These light and crispy chips go great with hummus or any of your favorite dips. They'r e great to bring to parties -- something healthier to "pig" out on!

Steps:

  • Remove the glass turntable from your microwave.
  • Separate poppadoms into four equal stacks (you'll be working in batches).
  • Break one batch of poppadoms into fourths, sixths, or eighths.
  • Spread poppadom pieces evenly about the turntable plate.
  • Spray with butter-flavored nonstick spray, evenly coating each piece.
  • Sprinkle poppadoms with Bacon Salt (to taste).
  • Return turntable to microwave, and microwave on high for one minute.
  • Check for doneness. A "done" poppadom chip will be completely crisp. Remove done poppadoms, and microwave remaining chips in 30-second bursts until all are crispy.
  • Repeat this process with remaining poppadoms.

  • Crush up your pork rinds in a Ziploc bag. I highly suggest doing this manually, as having some larger crumbs will add to the texture. I used BBQ flavored pork rinds, but you can use regular if that’s all you have on hand.
  • Dip your chicken into the egg mixture, then dip it into the pork rind crumb mixture. We’re doing a double dip to ensure there will be a nice crust. Dip it in the egg mixture again, and again into the pork rinds.
  • In a pan, put your olive oil and coconut oil. Turn to medium high heat and let it get hot.
  • Once the oil is hot, place your chicken inside. DON’T TOUCH IT! Let it sit here a while, almost until you smell burning. We want to make sure the crust gets nice and crisp.
  • Once you smell that burning, flip it over and do the same to the other side. Once you smell burning again, you can flip it over a second time.
  • Turn your heat down to the lowest setting, and let your chicken cook for about 6-7 minutes per side (depending on thickness of the chicken breast).
  • Let your chicken cook until it’s just about done. I like to keep my chicken nice and moist inside, JUST over the pink side in the center – but this is completely up to your own preferences.
