LOW CARB SPAETZLE NOODLES MADE WITH SOY FLOUR

Made these for dinner! used greek yogurt, next time trying heavy cream. BUT they were perfect! Low Carb Spaetzle Noodles made with Soy Flour image

Steps:

  • 1. Mix all ingredients well (dough very stiff).
  • 2. If you have a noodle press, it works the best (looks like a huge garlic press)or press dough thru a colander/strainer into a big pot of boiling water, boil for a couple minutes, strain and toss with butter!
  • 3. Serve as is or add your favorite lo-carb sauce, stew type meals, soups, the ideas are limitless!

2 large eggs
1/2 c soy flour
1/4 c heavy cream or greek yogurt
1 pinch salt
1 dash(es) pepper

Steps:

  • Sift flour, salt and nutmeg together in a bowl.
  • Pour eggs and 1/4 cup water into middle of flour mixture, beat with a wooden spoon.
  • Add enough water to make the dough slightly sticky, yet keeping it elastic and stiff.
  • Using a spätzle machine or a colander with medium holes, press the noodles into a large pot full of boiling salted water.
  • Cook noodles in the water about 5 minutes or until they rise to the surface.
  • Lift noodles out and drain on paper towels.
  • Brown noodles in melted butter over low heat.

3 cups unbleached flour
4 large eggs, beaten
1 teaspoon salt
1/2 cup water (or more)
1/4 teaspoon nutmeg
1/4 cup butter

  • In a separate bowl, whisk the room temperature eggs, one at a time until they are well beaten together. Add the milk to the eggs and blend together. Make a well in the middle of the flour mixture and pour egg mixture into it.
  • Mix until a soft dough forms. The dough should be just thicker than batter; spoon-able but not runny/pourable. Cover bowl with a hand towel and allow dough to rest for about 10 min.
  • Bring 2-3 quarts of lightly salted water to a boil. Scoop about half of the batter into a Spatezle tool, or use the large holes of a grater, colander or steamer basket and use a spatula to push the batter through the holes, into the boiling water.
