AIR FRYER BREADED SEA SCALLOPS
Steps:
- Preheat the air fryer to 390 degrees F (198 degrees C).
- Mix cracker crumbs, garlic powder, and seafood seasoning together in a shallow bowl. Place melted butter in a second shallow bowl.
- Dip each scallop in the melted butter and then roll in the breading until completely coated. Set on a plate and repeat with the remaining scallops.
- Lightly spray the air fryer basket with cooking spray. Arrange scallops in the prepared basket so that they are not touching each other; you may need to work in batches.
- Cook in the preheated air fryer for 2 minutes. Turn scallops over gently with a small spatula and cook until opaque, about 2 more minutes.

AIR FRYER SCALLOPS WITH CHERRY TOMATO SALAD
We're taking the guesswork out of getting juicy, buttery, perfectly cooked scallops on the table with a surprising technique: air frying! Quickly marinated in lemon and garlic, these flavorful sea scallops cook in just 4 minutes and come out seared on the outside and meltingly tender inside. A quick salad of shaved fennel, sweet cherry tomatoes and peppery arugula makes for a dinner for two that's sure to please!

Steps:
- Preheat a 6-quart air fryer to 400 degrees F.
- Put the butter in a small ovenproof ramekin and place in the air fryer basket (alternatively melt the butter in a microwave, about 30 seconds). Cook until the butter melts, about 1 minute 30 seconds. Carefully remove the ramekin from the air fryer and pour the butter into a medium bowl.
- Add 1 tablespoon olive oil, the garlic, juice of half a lemon, 1/2 teaspoon salt and a pinch of pepper to the bowl with the melted butter. Add the scallops and toss to coat. Set aside to marinate for about 10 minutes while you prepare the salad.
- Whisk together the shallot, sherry vinegar, honey, remaining 2 tablespoons olive oil, 1/2 teaspoon salt and a pinch of pepper in a large bowl. Add the cherry tomatoes, fennel, arugula and basil and toss to coat.
- Remove the scallops from the marinade and place on a plate. Sprinkle with paprika and place in the air fryer basket and cook until golden and just cooked through, about 4 minutes.
- Divide the salad between two plates. Top each with pistachios, fennel fronds and scallops. Squeeze a lemon wedge over the top and serve.
AIR FRYER SPICY BAY SCALLOPS
Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Combine bay scallops, smoked paprika, chili powder, olive oil, garlic powder, pepper, and cayenne pepper in a bowl; stir until evenly combined. Transfer to the air fryer basket.
- Air fry until scallops are cooked through, about 8 minutes, shaking basket halfway through the cooking time.

AIR FRYER CRUSTY SEA SCALLOPS

While the recipe specifies seasoned bread crumbs, you can use plain ones and add your own seasonings. I cannot wait for my herbs to come in this spring to try those. These were posted as a main dish, but would also make a lovely appetizer.

- Note: My scallops were rather smaller, so I reduced the cooking time by a couple of minutes. You will need to experiment with this. Whatever you do, buy only dry scallops - that is, scallops that have not been treated with chemicals.
- Dry the scallops and season with salt and pepper.
- Beat the egg in a small bowl. Put flour on a plate (I used rice flour because it was handy, and it worked quite well.
- Combine potato flakes and seasoned breadcrumbs on a plate. (I used plain breadcrumbs - panko - and seasoned with a variety of things at hand).
- Dredge scallops in the flour, dip in the beaten egg and let excess drip off, then coat with the potato/breadcrumb mix. Make sure each scallop is thoroughly covered.
- Preheat air fryer to 400 deg F. Spray the basket with oil. Arrange scallops in a single layer, spray with oil, and cook for 3 or 4 minutes.
- Turn over, spray the second side, and cook for another 3 to 4 minutes. You may need to adjust the cooking time, depending on size. Scallops should be golden brown and opaque.
- My scallops totaled about 6-7 ounces, so this was a single serving for me. Serve with cocktail sauce, tartar sauce, or a lemon butter sauce.
