Healthier Chicken Alfredo Pasta Recipe by Tasty image

Steps:

  • Heat the olive oil over a skillet and add chicken. Season with salt and pepper, and cook 5-8 minutes, or until no longer pink.
  • Remove the chicken from the pan and set aside.
  • In the same pan, add the garlic and sauté for one minute over medium heat.
  • Sprinkle the flour over the garlic and slowly add in the chicken stock.
  • Quickly stir to avoid lumps.
  • Add in the skim milk, stir ,and allow to reach a boil to thicken sauce. Season with salt and pepper.
  • Once the sauce is thickened, add in the spinach and stir until wilted.
  • Remove from heat and add in the cooked penne, chicken, and parmesan. Stir to coat.
  • Top with fresh parmesan.
  • Enjoy!

Steps:

  • Cook pasta according to package directions. In a small bowl, whisk cornstarch and 1 tablespoon soy sauce until smooth; stir in 1 tablespoon sesame oil. Transfer to a large resealable plastic bag. Add chicken; seal bag and turn to coat. Let stand for 10 minutes. In a small bowl, combine the vinegar, sugar, remaining soy sauce and sesame oil; set aside., In a large nonstick skillet or wok, stir-fry chicken in canola oil until no longer pink. Remove to a platter and keep warm. In the same skillet, stir-fry peas and carrots for 5 minutes. Add the green onions, ginger and pepper flakes. Cook and stir until vegetables are crisp-tender. Return chicken to pan. Add soy sauce mixture; drain pasta; Add to skillet; toss until combined.

  • Cook pasta until done, drain, return to pan.
  • Stir in spinach, tomatoes and 2t oil.
  • Cover to keep warm.

  • Place chicken in a large Ziploc bag or place on a baking sheet. Pierce the chicken all over with a fork. Drizzle with oil, garlic salt, and pepper. Let marinate. If you have the time, let the chicken marinate for at least 30 minutes (4-8 hours is ideal).
  • Preheat grill* to medium heat. Brush grill with oil to prevent sticking. Place chicken on the grill. Cook for approximately 5 - 6 minutes per side, depending on the thickness of chicken. The internal temperature of the chicken should reach 165 degrees. Remove chicken from grill and let rest for 5 minutes.
  • In skillet, over medium heat, add butter and let it begin to melt. Stir in diced garlic and let simmer for 1 minute. Stir in flour and stir quickly to form a paste. Quickly stir in chicken broth and use whisk to remove any lumps.
  • Stir in 1% milk. Let simmer for 6-8 minutes or until it starts to thicken. Turn heat to medium-low and add parmesan cheese (a little at a time, stirring after each addition). Add more salt and pepper, to taste. Remove from heat and let thicken.
