LOW FAT ITALIAN WEDDING SOUP
Delicious! and Low Fat by using lean ground turkey and beans. From Oxygen magazine. I searched and searched on zaar and I believe this low fat version is different than any other on here. This one was so flavorful.

Steps:
- Mix ground turkey, basil, oregano, garlic and cayenne pepper in a bowl using your hands.
- Lightly roll meat into 1/2 inch diameter meatballs and set aside on a plate.
- Over medium-high heat, cook meatballs in a fry pan until browned on all sides.
- Place cooked meatballs on a plate, covered with a paper town to absorb excess fat.
- In a 3 quart saucepan, bring chicken stock to a boil.
- Reduce heat and add kale.
- Simmer for 15-20 minutes until kale is tender.
- Stir in meatballs, beans and tomato and let simmer until heated through for 5 minutes.

LOW CALORIE SPINACH & MUSHROOM WEDDING SOUP
This soup is so good that every time I eat it, I still can't believe there are next to no calories. It sounds so simple, but doesn't taste that way. I promise you'll love it!

Steps:
- Bring chicken broth to a simmer.
- Add parmesan cheese and mushrooms to broth, stir. Continue to simmer for 3-5 minutes.
- Add frozen spinach. Allow to simmer for 5-10 minutes.
- For Vegetarian use the Vegetarian chicken flavored broth only.

VEGETABLE BEEF SOUP--LOW CARB/LOW FAT
This is a soup that I came up with while my Dh is on a diet to loose weight. This makes a lot of soup. I make it and use it for several meals, it freezes well. Serve with a crusty whole grain bread.

- Put beef, chopped onion, garlic, bay leaf and water in soup pot; cook until beef is tender.
- Add celery, tomatoes, V8 juice, zucchini, carrots, green beans, cabbage & okra if using.

LOW CARB DIET SOUP
We are on the South Beach Diet and my mother loves stew so this is my version of low carb diet soup.

Steps:
- Brown your stew meat in skillet.
- When all four sides are brown, transfer the entire contents to dutch oven (large pot).
- Begin adding your veggies and stir occasionally. Go ahead and add your Campbell's soup. Continue cutting veggies and adding them to your stew. Wash your container of tomatoes and then add to stew -- no cutting or chopping needed, add whole tomatoes. Once everything has been added, add your tomato juice. Add approximately two cups of water and cook on medium low for 1 - 1 1/2 hours.
- If you would like to spice this up a bit you can add two bay leaves or hot sauce. I do not add anything because of my mother's health and diet, no salt, no pepper, etc., but cetainly you could. There is no right or wrong way to make this. I have added leftover red beans if I have them cooked and on hand. It's simple, keep it low carb and add any low carb veggies you like and eliminate anything on this list that you don't like. This is fast easy and healthy and we really like it. We have been on the South Beach diet for about two months, so this is a great filler. I was on a plateau until I began making and eating this soup. Don't know if the soup had an affect or not, but something is definitely working. 10 more pounds to go.

EASY LOW FAT, LOW CARB LOW CAL DIET SOUP
I found this in a vegetarian cookbook. I haven't tried it yet. I'm not sure about the cucumber but you can substiute it for any veggie you like (broccoli, spinach, cauliflower, beets). Use any herbs you enjoy. :-)

- Heat the water and chop all the vegetables. Add the vegetables to the boiling water and cook for about 10 minutes.
- Add the stock cubes and the bay leaf and cook for another 5 or 10 minutes. Add a little salt to taste then turn off the heat and add the chopped green herbs.
