LOW FAT RAS MALAI

adapted from the desicookbook, link: http://www.desicookbook.com/recipe.aspx?Recipe=57 So I've tried this and it turned out to be pretty amazing, and better yet its soooo low on calories and fat, altho this dish is traditionally a very heavy dessert, this version tastes just as good, without the added fat. And when ur forming the dough into little balls u'll want to have wet hands, otherwise they're sort of impossible, and u need to keep in mind these balls are going to swell up, double or triple in size, so make them very small.

Low Fat Ras Malai image

Steps:

  • Mix together the first 4 ingredients into a dough and form into small oval, slightly flattened balls.
  • Meanwhile boil the milk with sugar and cardamom seeds.
  • When the milk starts to boil add the malai/ milk powder balls.
  • When they start to swell up lower the heat and cook for 10 minutes.
  • Just before removing from heat add kewra essence.
  • Garnish with pistachios.
  • Chill and serve.

1 cup non-fat powdered milk
2 egg whites
1 teaspoon oil
1 teaspoon baking powder
1 liter 1% low-fat milk
6 tablespoons sugar
1 green cardamoms (Chhoti Ilaichi)
1 tablespoon chopped pistachios (Pistay)
1/2 teaspoon kewra essence

RAS MALAI

Ras Malai is cheese dumplings in cream sauce. This is a popular Indian dessert and takes a long time to prepare the traditional way. I came up with some shortcuts and ended up with this recipe which tastes exactly the same as traditional Ras Malai.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Blend the ricotta cheese and 1/4 cup sugar together in a bowl with a hand mixer; divide the mixture between 12 muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. Arrange the cheese balls onto a dessert platter.
  • While the cheese bakes, pour the half and half into a saucepan and bring to a simmer over low heat; simmer 10 minutes. Stir 1 cup sugar, the cardamom, rose water, and saffron into the half and half and simmer another 2 minutes. Remove from heat and allow to cool completely. Drizzle the cooled mixture over the cheese balls. Sprinkle the almonds and pistachios over the cheese balls to serve.
