LOW GI "APPLE" CRISP
One of the toughest concepts of the Sugar Busters and other low GI diets is the limitation to consume fruit all by itself, not mixed with any other ingredients. Here is a mock apple Crisp that is acceptable because it utilizes zucchini, a vegetable that has a low GI value. People never guess that this dish contains zucchini.

Steps:
- Preheat oven to 350 degrees.
- Bring a pot of water to a boil.
- Peel an drain zucchini.
- Slice it lengthwise into quarters.
- Cut all the seeds out.
- Slice the zucchini into slices that resemble apple slices.
- You should have about 6 cups.
- Boil the zucchini in the boiling water for 3 minutes.
- Drain well.
- Mix together the 1 cup of fructose, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 2 tablespoons flour.
- Sprinkle over the zucchini slices and toss to coat evenly.
- Place zucchini slices into a greased 8 or 9 inch square baking pan.
- Mix the remaining ingredients together to make the crumb topping.
- Distribute it evenly it evenly over the zucchini.
- Bake for 45 minutes, until topping is browned and crispy.
- May be served warm, cold or at room temperature.
- Yield: 6-8 servings.
LOW CALORIE APPLE CRISP
This recipe says it cost .47 cents per serving. I found this recipe in a Sams Club leaflet. I have not tried this recipe, but I'm posting it for safe keeping. I plan on using Weight Watchers oatmeal and Splenda brown sugar.

- Preheat oven to 375.
- For filling, combine cored, peeled and sliced apples with apple juice, Stevia and cinnamon in a large bowl.
- Spray an 8x8-inch baking pan with cooking spray. Spread apple mixture evenly over bottom of pan.
- For topping, combine oatmeal, flour, brown sugar and margarine in a medium bowl. Sprinkle oatmeal mixture evenly over the top of apples.
- Bake for 30-35 minutes or until fruit is tender and topping is golden brown.

GRILLED APPLE CRISP

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Add the apples to a 10- to 12-inch cast-iron skillet, filling it almost to the top. Combine the flour, oats, sugars, cinnamon and salt in a large bowl. Cut the butter into small cubes and add to the flour mixture. Using your hands, press the butter into the dry ingredients until it forms a course crumble. Sprinkle evenly over the apples.
- Place the skillet over indirect heat, cover the grill and cook until the apples are completely tender when pierced with a knife and the crumble is golden brown and crispy, 30 to 40 minutes. Serve warm or at room temperature.
- (Alternatively, you can bake this in an 8-inch square cake pan in a 350 degrees F oven for 45 minutes to 1 hour.)
GO-TO APPLE CRISP

- To make the topping, mix the flour, oats, brown sugar, pecans, baking powder, baking soda and salt in a medium bowl. Stir while drizzling in the melted butter, then set aside.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

- Preheat the oven to 375 degrees F (190 degrees C).
- Toss sliced apples with lemon juice to prevent browning.
- Mix flour, rolled oats, wheat and barley nugget cereal, melted butter, 1/4 cup white sugar, and 1/4 cup brown sugar together in a large bowl.
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir 1/3 cup brown sugar, 1/3 cup white sugar, and cinnamon into melted butter until sugar begins to dissolve, 3 to 4 minutes. Add apples and water; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.
