TURKEY MACARONI BAKE
"A co-worker gave me this recipe when we were discussing quick-and-easy ways to use leftover turkey," recalls Cherry Williams of St. Albert, Alberta. "The mild cheesy casserole is a hit with my family. And it doesn't get much easier than this...you don't even have to cook the macaroni first!"

- Preheat oven to 350°. In a large bowl, combine turkey, macaroni, 1-1/2 cups cheese, soup, milk, mushrooms and pepper. Pour into a greased 2-qt. baking dish. , Cover and bake until macaroni is tender, 60-65 minutes. Uncover; sprinkle with remaining 1/2 cup cheese. Bake until cheese is melted, 5-10 minutes longer.

- Heat oven to 350°F. Spray 2 1/2-quart casserole with nonstick cooking spray. Cook macaroni to desired doneness as directed on package. Drain.
- In large nonstick skillet, cook and stir turkey and garlich-pepper blend over medium-high heat for 6 to 8 minutes or until turkey is no longer pink.
- Add cooked macaroni, zucchini, basil and Alfredo sauce; mix well. Spoon mixture into sprayed casserole. In small bowl, combine all topping ingredients; mix well. Sprinkle over casserole.
- Bake at 350°F. for 30 to 40 minutes or until thoroughly heated.

- Cook macaroni according to package directions. Meanwhile, in a saucepan, saute the onion in butter. Add the flour, salt, pepper and thyme; stir until blended. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain macaroni; add the white sauce, turkey and cheese. Transfer to a 2-qt. baking dish coated with cooking spray., Combine the topping ingredients; sprinkle over casserole. Bake, uncovered, at 350° for 30-35 minutes or until heated through. Place under broiler for about 5 minutes or until golden brown.

TURKEY TACO MAC
Steps:
- Preheat oven to 350 degrees F.
- Brown ground turkey in a large skillet over medium-high heat; set aside.
- Cook macaroni and cheese according to directions on package.
- In a large bowl, stir to combine macaroni and cheese, cooked ground turkey, pimentos and corn and transfer to 3-quart casserole dish. Crumble tortilla chips over top and sprinkle with Cheddar cheese. Place in oven and bake for 30 minutes.
- Remove from oven and let cool for 5 minutes before serving.
MAC AND CHEESE WITH GROUND TURKEY CASSEROLE
This was a total experiment. For my first try it actually didn't come out too bad. It was a little dry so I think for next time I will omit one egg, add more milk (or even some fat free half and half), and not sure if I want to add the ricotta again. The recipe you see below though is exactly the amounts that I used. Try it and play around with the ingredients as much as you like. I found this recipe on Johanna's Recipe Blogg. I have not tried this recipe, but I'm posting it for safe keeping.

- Preheat the oven to 350° F.
- Grease a 13x9 casserole dish, and set aside.
- In a large saute pan brown ground turkey. Once completely brown add packet of the Lipton onion soup mix. (may add more salt and pepper to your liking) Set aside and let cool.
- Mix ricotta, 1 egg, 1/2 tsp salt, and 1/2 pepper.
- Whisk together the remaining eggs, milk, salt, and paprika in a bowl.
- Add a little bit of of ground turkey mixture to ricotta to temper eggs. Once done add ricotta mixture to the ground turkey mixture and mix completely.
- Mix cooked macaroni and ground turkey mixture together.
- Layer the cooked macaroni mixture with 1 1/2 cups of the cheese in the casserole dish. Pour milk, egg and spice mixture over everything. Top with the remaining cheese, and sprinkle a liberal amount of Parmesan cheese and add a little sprinkle of breadcrumbs.
- Bake it for 40 to 45 minutes or until the mixture is set in the middle.
- This is the finished product. Yum!

- Cook macaroni according to package directions, drain. Meanwhile, in a medium, saucepan melt butter over med-low heat. Add celery and onion, cook until tender. Blend in soup, milk and cheese. Cook until the cheese is melted. Combine cheese with macaroni, turkey, and salt. Spray 3 q casserole dish with non-stick spray. Transfer to baking dish and top with crushed potato chips. Bake 350 for 30 min or until hot and bubbly and the chips are toasted.
