DELUXE MAC & CHEESE WITH HAM AND PEAS
I had some leftover Ham from our 2011 Christmas Dinner,and needed a different way to serve it.O.k. I hear some of you saying " It's the same way to make M & C with ham. - Pre heat oven to 350 degrees,and lightly grease or spray a 1 1/2 quart baking dish.
- In a medium saucepan ( I used the same one that was used to cook the pasta in,one less pan to wash ),melt margarine over medium heat and add onion.
- Cook onion until soft, then add flour and cook until flour is lightly browned.
- Add milk,and all seasonings stir until slightly thick.
- Reduce heat to low and add velveeta,stirring until cheese is melted.
- Remove from heat,add cooked pasta,ham and peas.
- Stir until all ingredients are well coated,if mixture seems to thick add a bit more milk.
- Pour into prepared baking dish and top with optional cheese,bake for 25 minutes or until bubbly.

SUPER DELUXE OLD FASHIONED MACARONI AND CHEESE

- Preheat oven to 350 degrees F. Meanwhile, melt 4 tablespoons of the butter in a non-reactive saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then. Slowly whisk in the milk and bring to a boil. Reduce heat to low and simmer, whisking on occasion for 3 to 4 minutes. Remove pan from heat and whisk in grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and season to taste with salt and cayenne pepper. In a mixing bowl combine sauce with sun dried tomatoes and drained macaroni and adjust seasoning. Transfer mixture to a 13 x 9-inch baking pan and spread it out evenly. Sprinkle bread crumbs on top and dot with remaining 4 tablespoons of butter. Bake until hot and bubbly, about 30 minutes. Let stand 5 minutes before serving.

MACARONI WITH HAM AND CHEESE

- Preheat the oven to 425 degrees.
- Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.
- Meanwhile, cut the ham into 1/2-inch cubes and set aside. There should be about 2 cups.
- Slice the mushrooms. There should be about 2 cups.
- Cut the Cheddar into slices about 1/4 inch thick. Stack the slices and cut them into 1/4-inch-wide strips. Cut the strips into 1/4-inch cubes. There should be about 2 cups.
- Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste.
- Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute. Add the cheese sauce, the cayenne and cream. Cook, stirring, about 1 minute.
- Pour and scrape the mixture into the macaroni and mix well. Transfer to a buttered 10-cup baking dish. Sprinkle the top with Parmesan cheese and place in the oven. Bake 10 minutes. Turn the broiler to high.
- Brown the macaroni and cheese under the broiler until the top is nicely browned, 2 to 3 minutes.

SUPER DELUXE MACARONI AND CHEESE WITH VARIATIONS
This super rich macaroni and cheese isn't designed for delicate eaters, nor for dieters. It's made the old fashioned way, with a white sauce enriched with heavy cream and sharp Cheddar cheese. The sauce coats the tender macaroni and bakes under a topping of bread crumbs and butter. You won't need more than a green salad served before or a fruit salad served afterward, to make the meal complete.

- Preheat the oven to 350°F.
- Bring a large pot of salted water to a boil for the pasta. While the water is heating, grate the cheese with a rotary grater and set it aside.
- Add the pasta to the boiling water and cook until it is barely tender, about 7 minutes. Drain, rinse under cold water, and drain again.
- Melt 4 Tablespoons of the butter in a non-reactive medium size saucepan over medium heat. When it is bubbly, whisk in the flour and cook for a few seconds, just until it is combined. Whisk thoroughly so you gather all the flour into the butter. Slowly add the milk, whisking constantly so the flour paste absorbs the milk without creating lumps. When about half the milk has been added, you can add the rest at a faster rate, but continue to whisk constantly. Bring the mixture to a boil, whisking constantly but not frantically. When it reaches the boil, reduce the heat to low and simmer, still whisking occasionally, until the sauce is cooked through, 3 to 4 minutes. Remove the pan from the heat and add the grated cheese; whisk vigorously until the cheese has melted. Then whisk in the heavy cream, and season to taste with salt and cayenne.
- In a large mixing bowl, combine the sauce with the drained macaroni. Transfer the mixture to a 13x9 inch baking dish, spreading it out evenly. Sprinkle the bread crumbs on top, and dot with the remaining 4 Tablespoons butter. Bake until it is hot and bubbly, about 30 minutes. Let it stand for 5 minutes before serving.
- VARIATIONS:
- Ham, Macaroni, and Cheese: Fold in 1/4 pound diced smoked ham, or 2 ounces finely chopped prosciutto, when you combine the macaroni with the cheese sauce in step 5.
- Sun-Dried Tomato Macaroni and Cheese: Fold in 1/4 cup finely chopped sun dried tomatoes when you combine the macaroni with the cheese sauce in step 5.
- Vegetable Macaroni and Cheese: Fold in 1 cup diced cooked vegetables, such as carrots, when you combine the macaroni with the cheese sauce in step 5.
- Macaroni and Multi-cheeses: Instead of the plain Cheddar, use a combination of cheeses; Cheddar and Parmesan; Asiago, Cheddar, and smoked mozzarella; Cheddar, Fontina, chevre, and Parmesan; or another outrageously rich mixture.
- Note: This tends to dry out when reheated the following day, so it is best to reheat it, covered, in a microwave. Makes 6 to 8 servings.

- Bring a large pot of salted water to boil. Stir in the macaroni. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
