- 1. Preheat oven to 350 degrees F. 2. Melt butter in a 2-quart baking dish. Combine flour, sugar, milk and vanilla. Pour over butter. Do not stir. 3. Spoon peaches over batter. Do not stir. Bake about 40 minutes.
MAGIC PEACH COBBLER (OR ANY FRUIT)
This recipe is for peach cobbler, but you can substitute the peaches with other fruit - just drain juices off and adjust sugar if needed.

- 1. Melt margarine or butter in 9"x5" pan. Mix 1 cup sugar, flour, baking powder and milk in a bowl. Pour into pan over the margarine/butter, but do NOT stir.
- 2. Add peaches on top of the batter. Sprinkle remaining sugar over the peaches.
- 3. Bake 30 minutes at 350.
- 4. Insert toothpick in cobbler and it is done when toothpick comes out clean.
- 5. Note: May substitute other fruit for peaches. Drain any juice off and adjust sugar as needed.

- Preheat oven to 375°. In a large bowl, mix sugar, cornstarch, cinnamon and cardamom. Add peaches, berries and lemon juice; toss to combine. Transfer to a 10-in. cast-iron or other ovenproof skillet., In a small bowl, whisk the first 6 topping ingredients; cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir just until moistened. Drop mixture by tablespoonfuls over peach mixture., Bake, uncovered, until topping is golden brown, 40-45 minutes. Serve warm. If desired, top with vanilla ice cream.

EASY BATTER FRUIT COBBLER
Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

- Preheat oven to 400°. In a Dutch oven, combine brown sugar, cornstarch and water until smooth. Add peaches; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low; stir in butter and lemon juice. , For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk, butter and orange zest if desired. Transfer hot peach mixture to an ungreased 13x9-in. baking dish. Spoon topping over peaches. Bake, uncovered, until golden brown, 30 to 35 minutes. If desired, serve with vanilla ice cream.
