CHILI SAUCE
This is Top Secret's version of Heinz's Premium Chili Sauce. I use it all the time and usually have to run to the store to buy it for a recipe. I am posting this so I won't have to run to the store all the time. Per Todd Wilbur: you can make this into Heinz Cocktail Sauce by stirring in 2 teaspoons of prepared horseradish when the sauce has cooled.

Steps:
- Whisk all the ingredients together in a small saucepan.
- Place over medium heat.
- When mixture begins to bubble reduce heat to low and simmer for 30 minutes.
- Cover and cool.
- Refrigerate when cold.

SIMPLE HOT CHILLI SAUCE
I have an abundance of chillis so I want to make a sauce. I'm planning on trying this with other types of chillis as needed, but for now, saving this recipe per how I found it. http://www.taste.com.au/recipes/19696/hot+chilli+sauce Modified per suggestions. Receipe states should last 3 weeks in the fridge, but I'm sure if you sterilised, it would last longer and canning would probably make it last even longer. Prep time includes blending time.

Steps:
- Combine chilli, tomatoes, sugar, salt and vinegar in a saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer, stirring occasionally, for 7 minutes or until sauce thickens slightly. Remove from heat. Stand for 5 minutes.
- Process mixture, in batches, until smooth. Pour into hot sterilized jars. Secure lids. Refrigerate for up to 3 weeks.

- Put the chili pepper, garlic, sun-dried tomatoes and basil on a cutting board. Crush the chili pepper and the garlic. With a mezzaluna or sharp knife, finely chop the ingredients and bring to a mulch consistency.
- Put the mixture in a jar. Add the olive oil to cover the chili paste. Mix well.

- Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
- Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. - WHISK all ingredients well in a medium bowl: 1 (6 ounce) can quality tomato paste, 1/2 cup water, 1/2 cup light corn syrup (Karo), 1/2 cup distilled white vinegar (Heinz), 1 tablespoon minced onion flakes, 1 teaspoon unseasoned sweet chili powder, 1 teaspoon plain salt, 1/2 teaspoon Worcestershire sauce, 1/4 teaspoon ground allspice, 1/8 teaspoon ground cloves, 1/8 teaspoon garlic powder, 1/8 teaspoon red chili flakes, 1/8 teaspoon white pepper.
