CHEESY MACHO NACHOS

This is a Paula Deen recipe. I made these for a fight night get together we were having and my guests loved them. In fact, I wanted more and they were all gone! Hope you enjoy this easy and delish recipe. Prep time includes cooking time.

Cheesy Macho Nachos image

Steps:

  • Heat oven to 350.
  • Lay chips on oven safe platter. You will be layering this so split them.
  • Warm beans and chili on stove or in microwave. Stir beans until smooth.
  • Spread beans over tortillas. Top with onion, cheese, jalepenos, chili and cheddar cheese. Repeat by layering tortilla chips and toppings until gone.
  • Place in oven and bake until cheese is melted.
  • Dollop with sour cream. Add tomatoes and green onions on top.

4 green onions, chopped
2 ripe tomatoes, diced
2 jalapenos, sliced
tortilla chips
1 (16 ounce) can refried beans
1 (16 ounce) package monterey jack cheese
1 (16 ounce) package cheddar cheese
1 (8 ounce) container sour cream
1 (12 ounce) can prepared chili with beans

Manda's Macho Nachos image

Steps:

  • Prep: Brown and season hamburger. Chop onion and jalapenos. Dice tomato, set aside. heat refried beans.
  • Heat oven to 425.
  • Spray a glass baking pan, put down tortilla chips until bottom and sides are covered. Add layer of refried beans, followed by hambuger,onion, jalapeno, and cheese. Then start layering process all over. Do this until you have 3 or 4 layers. Be sure it is covered with layer of cheese before baking. Bake for 20 minutes, or until cheese is melted on top. When nachos have gone from hot to warm, add sour cream and diced tomatoes. You could also include salsa. Hope you enjoy as much as my hubby does!

  • Brown the ground chuck in a medium-size skillet over medium heat, and drain any grease. Add 2/3 cup of water, the taco seasoning mix and bring to a boil. Cook 4-5 minutes. Remove from heat and set aside.
  • Add a single layer of tortilla chips to the bottom of a baking sheet or large pan. Sprinkle half of the ground beef mixture and half of the black beans over the chips. Top with 1-2 cups shredded cheese.
  • Place on a rack at least 10 inches under the broiler for one to three minutes or until the cheese has melted. Carefully remove from the oven.
