ROASTED TURKEY WITH MAPLE CRANBERRY GLAZE
I prepare turkey with a taste of Canada in mind. The sweet maple flavor comes through even in the breast meat. You may start to notice it's caramelized color after about 2 hours. That's when I cover it loosely with foil while it finishes cooking. The meat will stay tender and juicy. -Suzanne Anctil, West Vancouver, British Columbia

- Preheat oven to 325°. Place turkey on a rack in a shallow roasting pan, breast side up. Tuck wings under turkey; tie drumsticks together. In a small bowl, combine the maple syrup, cranberry sauce and walnuts. Pour over turkey., Bake, uncovered, until a thermometer inserted in thickest part of thigh reads 170° to 175°, basting occasionally with pan drippings, 3 to 3-1/2 hours. Cover loosely with foil if turkey browns too quickly. Cover and let stand for 20 minutes before carving.

- For spice rub:
- Mix all ingredients in small bowl.
- For glaze:
- Mix first 8 ingredients in small saucepan. Bring to boil over medium heat, whisking until smooth. Cool to room temperature.
- Do ahead: Spice rub and glaze can be made 1 day ahead. Cover and store spice rub at room temperature. Cover and refrigerate glaze. Rewarm glaze just until pourable before using.
- Spray grill rack with nonstick spray and prepare barbecue (medium heat). Sprinkle spice rub generously over both sides of pork chops (about 1/2 tablespoon per side), pressing to adhere. Place pork chops on grill, cover, and cook 5 minutes per side. Brush generously with glaze. Move to cooler part of grill and continue to grill, uncovered, until cooked through, brushing frequently with glaze, about 3 minutes longer per side.

GRILLED MAPLE AND CRANBERRY GLAZED CHICKEN
Whole berry cranberry sauce becomes a rich and delicious sauce for chicken when paired with real maple syrup.

- Brush grill rack with canola or vegetable oil. Heat gas or charcoal grill. Mix half of the cranberry sauce with the syrup. Sprinkle salt over chicken.
- Place chicken on grill over medium heat. Cover grill; cook 10 minutes. Turn chicken. Cover grill; cook 10 to 15 minutes longer, brushing occasionally with cranberry-syrup mixture, until juice of chicken is clear when center of thickest part is cut (170°F). Discard remaining cranberry-syrup mixture.
- Serve chicken with remaining cranberry sauce.
