MAPLE MEATLOAF MUFFINS
Sweet potatoes and maple syrup add natural sweetness to these muffins-perfect for prepping for a week of breakfasts, dinners, or lunches.

Steps:
- Preheat the oven to 350°F.
- Place the water and a steamer basket in a medium-size cooking pot over high heat. Bring the water to a boil.
- Place sweet potatoes in the basket, cover, and steam for 10 to 12 minutes, or until the potatoes easily break apart with a fork. Drain remaining water. Let potatoes cool.
- In a food processor, place the cooked sweet potatoes, bacon, thyme, garlic powder, salt, pepper, and maple syrup. Process into a thick paste.
- Place the meat in a large bowl, add the sweet potato mixture, and combine well.
- Gently spoon 1/3 cup of the meatloaf mixture into each of 12 muffin cups.
- Bake on the middle rack for 15 to 20 minutes or until cooked through.
- Remove cooked meatloaf muffins and repeat with remaining meatloaf mixture.
DISAPPEARING SWEET POTATO MUFFINS
These are really good and a great way to get some good stuff into my kids, they eat them like candy! I didn't like the recipes with cooked/mashed sweet potatoes, so when I found this one, I was so excited. These smell absolutely wonderful when they are cooking too! We usually leave out the nuts, but put in the raisins

- Preheat the oven to 350 degrees F (175 degrees C). Grease muffin tins to hold 12 muffins.
- Whisk together brown sugar, oil, vanilla and eggs in a small bowl.
- Mix together the flour, baking powder, spices, salt, and grated sweet potatoes in a large bowl. Make a well in the center, and pour in the egg mixture. Stir the egg mixture, gradually incorporating it with the flour mixture. Stir in the raisins and walnuts.
- Spoon the batter into the tins. I like to fill each tin to the rim to make a large cap. Bake the muffins for 25 to 30 minutes or until a toothpick inserted into the middle comes out clean. Take the muffins out of the oven and run a paring knife carefully around each muffin, then invert the pan, and knock one edge against your work surface to release the muffins. Serve the muffins right away.

- Mix flour,sugar and cinnamon together and stir well.
- Mix in cooking oil and eggs; stir in sweet potatoes, raisins, vanilla and nuts.
- Line muffin tin with paper liners.
- Fill about 1/2 full.
- Bake at 350 degrees for 30 min.
- The muffin mixture will keep in refrig for 3 days.

- Preheat oven to 350F and grease a muffin pan.
- Combine 1 3/4 cups flour, baking soda, cinnamon and salt in a large bowl.
- In another bowl, combine eggs, both sugars, oil, and sweet potatoes; beat at medium speed until blended.
- Make a well in the center of the dry ingredients; add the wet ingredients into this well and stir just until moistened.
- Dredge pecans and dates in 1/4 cup flour; fold into muffin mixture.
- Fill muffin tins to 3/4 full and bake for 27-30 minutes.
- Remove from pans immediately and cool on wire racks.
- (Alternatively, fill mini muffin tins and bake for 12-14 minutes, to yield 4 dozen muffins).

- In a large bowl beat together the sweet potato, eggs, milk, honey and butter until it is creamy.
- Combine the flour, baking powder, salt and cinnamon.
- Add dry ingredients to sweet potato mixture. Just mix until combined.

- Put a pecan half on top of each muffin.
- Bake at 400 degrees for 20 minutes.
