OUTRAGEOUSLY GOOD BROILED SHRIMP!
I experienced the most wonderful broiled shrimp dinner at a local restaurant and created my version which is pretty darn close to their recipe. You will absolutely love these! Prep time includes cleaning and butterflying shrimp.

Steps:
- Butterfly shrimp and place on non-stick baking pan or line pan with aluminum foil for easier cleanup.
- Brush shrimp with melted butter.
- Sprinkle lightly with garlic salt.
- Mix together bread crumbs, Parmesan cheese and parsley.
- Sprinkle lightly over shrimp.
- Drizzle lightly with additional melted butter.
- Broil until light brown.

- In a 3-qt. glass serving bowl, combine shrimp, onion, lemons and olives. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. , Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.

MARINATED GRILLED SHRIMP COCKTAIL

- Cut along the back about 1/4-inch deep through the shell of each prawn to remove the vein. Put prawns in a shallow, non-aluminum baking dish.
- In a small bowl, whisk together citrus oil, onion, garlic, cilantro, and lemon juice. Pour over prawns, cover, and let marinate, refrigerated, 1 to 4 hours.
- Preheat grill or broiler.
- When ready to cook, thread prawns on skewers and discard marinade. Season with salt and pepper, to taste, and grill or broil, turning once, until just done, 2 to 3 minutes.
- Shrimp can be served warm or at room temperature. They are delicious on their own or with Citrus Aioli.
- Cook's Note: Leaving the shells on the prawns protects them from drying out during cooking. This method works so well that I use it often when preparing shrimp or prawns for salads, pasta, pizza, and sandwiches. Simply reduce the cooking time if they will later be cooked more, for instance as part of a sauce or pizza topping. Peel shrimp after they come off the grill.

- Coarse salt
- 1 cup prepared mayonnaise
- 2 lemons, zested
- 1 lemon, juiced
- Freshly ground black pepper
- Using a mortar and pestle, or on a cutting board, finely mash the garlic cloves with a pinch of salt.
- In a bowl, mix the garlic paste with remaining ingredients and serve. Keep refrigerated until ready to serve.

- Bring a 6-quart pot of water to a boil; cook shrimp until bright pink and cooked through, 2 to 2 1/2 minutes. Transfer shrimp using a slotted spoon to a bowl of ice water to cool; drain and pat shrimp dry. Place shrimp in a large resealable bag.
- Mix olive oil, salad dressing, garlic, and jalapeno pepper together in a glass or plastic bowl; pour marinade into bag of shrimp, coat shrimp with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 20 minutes to 1 hour.
- Line a baking sheet with aluminum foil and spread a thin layer of salt over foil.
- Preheat the oven's broiler.
- Remove shrimp, 1 at a time, from marinade and place on the salted baking sheet. Discard unused marinade.
- Place baking sheet on rack furthest away from the broiler. Broil in the preheated oven until shrimp begin to brown and peel back, 7 to 10 minutes. Turn off broiler and crack oven door open for 3 minutes before removing shrimp from oven.

- Place shrimp in a large mixing bowl. Add lemon juice, olive oil, chopped green onion, minced garlic, ground saffron, salt, pepper, and thyme; stir well. Cover and refrigerate 1 hour, stirring mixture occasionally.
- Drain shrimp, reserving marinade. Combine marinade and butter in a medium saucepan. Cook over medium heat, stirring occasionally, until butter melts. Set mixture aside, and keep warm.
- Place shrimp on a broiling pan. Broil 4 inches from heating element 3 minutes; turn and broil an additional 3 minutes or until done.
- Remove shrimp to a warm serving platter, and sprinkle with chopped fresh parsley. Serve warm with prepared sauce of your choice.
