STICKY MALT LOAVES
There's something very satisfying about a cup of tea with a slice of buttered malt loaf - this simple, good-for-you version makes two and improves on keeping

Steps:
- Heat oven to 150C/130C fan/gas 2. Line the base and ends of two greased 450g/1lb non-stick loaf tins with strips of baking parchment.
- Pour the hot tea into a mixing bowl with the malt, sugar and dried fruit. Stir well, then add the eggs.
- Tip in the flour, then quickly stir in the baking powder and bicarbonate of soda and pour into the prepared tins. Bake for 50 mins until firm and well risen. While still warm, brush with a little more malt to glaze and leave to cool.
- Remove from the tins. If you can bear not to eat it straight away, it gets more sticky after wrapping and keeping for 2-5 days. Serve sliced and buttered, if you like.

- Method â Oven temp 150C/130C fan/gas2 Grease and line a 2lb loaf tin with baking paper. Pour the hot tea into a mixing bowl and add all the dried fruits and sugar (mixing well). Then add the eggs and mix again. Now add the flour and baking powder quickly to the fruit mix and stir well to combine. Pour the batter into the prepared tin and bake for 50 mins or until well risen and firm. Once out of the oven brush whilst still warm with some more of the malt extract to create a sticky glaze. Steps:
- Set oven to 350°F.
- Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
- In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
- Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
- The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
- Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
- Pack the mixture into prepared pan.
- Place the pan on a foil-lined baking sheet to catch any spills.
- Bake for 1 hour.
- While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
- After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
- Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
- Enjoy!

- Spray 5-quart oblong slow cooker with vegetable cooking spray.
- Make foil handles in slow cooker.
- Combine beef, eggs, chili sauce, and breadcrumbs and mix well.
- With your hands, shape half of the beef mixture into flat loaf and place in bottom of slow cooker sprayed with vegetable cooking spray.
- Sprinkle half of the shredded cheese over meat loaf and press into meat.
- Form remaining meat mixture in the same shape as the first layer and place over cheese.
- Cover and cook on low for 6-7 hours.
- When ready to serve, sprinkle remaining cheese over loaf and leave in cooker until cheese melts.
- Carefully remove loaf with foil handles and place on serving plate.

- Make the malt loaf. Place the tea bag in a jug and add the just-boiled water. Leave to brew for 5 minutes, then discard the bag.
- Tip the raisins and prunes into a microwave-safe bowl, then pour the tea over. Cover with cling film and pierce a few holes in the top. Microwave on full power for 4 minutes.
- Pour the malt extract into a small pan with the treacle and sugar and cook, stirring continuously, over a low heat for 2–3 minutes, until the sugar dissolves.
- Sift the flour and baking powder into a mixing bowl and make a well in the centre. Add the warm malt mixture and the tea-soaked fruit and any soaking liquid.
- If you can bear to wait before tucking in, once the malt loaf is cool, wrap it tightly in baking paper and leave it to really develop its flavour and texture for 1–2 days.
