MARY'S BLUE RIBBON BANANA BREAD

Yum! This is an old-fashioned banana bread recipe that's delicious. It's a very basic recipe but so good. Reminds us of something our grandmother would make. This banana bread is moist and tender, slightly dense, and has a nice crust on the outside. This would be great for breakfast or a snack.

Mary's Blue Ribbon Banana Bread image

Steps:

  • 1. Sift dry ingredients together.
  • 2. In a large bowl cream butter and sugar well.
  • 3. Add eggs and beat well until light and fluffy.
  • 4. Add vanilla.
  • 5. Mix banana pulp with sour cream.
  • 6. Add pulp alternately with dry ingredients to butter, sugar, and eggs mixture on slow speed.
  • 7. Scrape sides as needed.
  • 8. DO NOT OVER BEAT. Beat only until combined. I then stir with a wooden spoon to make sure it is all combined.
  • 9. Grease and flour a loaf pan, 9X5X3. Bake at 350 degrees for 50-60 minutes.
  • 10. Test with a cake tester. Do not test in the crack. Test off to the side. It should come out clean, but be careful not to over bake. You want a loaf of moist banana bread.

2 c all-purpose flour
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c butter, room temperature
1 c sugar
2 eggs
1 1/2 c ripe banana pulp, mashed
1/4 c sour cream
1 tsp vanilla
1/2 c chopped walnuts, optional

MY AUNT'S BANANA BREAD

I got this recipe from one of my aunts, who got it from an old woman she met in Hawaii while stationed there. It is hands-down the very best banana bread I've ever tasted!! No extra buttering required ;)

My Aunt's Banana Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Stir the bananas and vinegar together in a bowl, and set aside. Cream the sugar and butter together in a large bowl until creamy and smooth, then beat in the eggs. Stir in the reserved banana mixture. In a separate bowl, stir the flour, baking soda, baking powder, and salt together until the mixture is free of lumps. Mix the flour mixture into the butter-sugar mixture until well blended, and stir in the chopped walnuts and chocolate chips. Spread the batter into the prepared loaf pan.
  • Bake in the preheated oven until lightly browned and a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes. Let cool in pan about 5 minutes, then turn out onto a wire rack.

Chocolate Walnut Banana Bread image

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-by-5-inch loaf pan with nonstick cooking spray.
  • In a large bowl, whisk together the granulated sugar, molasses, oil, eggs, bananas and vanilla until well combined. Set aside.
  • In a small glass measuring cup, stir together the milk and vinegar and set aside.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon. Stir in the walnuts and chocolate.
  • Add about a third of the dry ingredients into the banana mixture and stir gently until almost combined. Add half the milk mixture and stir just to combine. Stir in another third of the dry ingredients followed by the remaining milk mixture and finally the remaining dry ingredients.
  • Transfer into the prepared pan and sprinkle with the turbinado sugar.
  • Bake for 55 minutes to 1 hour, or until deeply golden brown and a cake tester or skewer inserted into the center of the loaf comes out clean. Cool for 20 minutes before turning it out of the pan onto a wire rack to cool to room temperature.
