- Whisk together eggs, milk, flour, baking powder, and onion salt in a bowl to make a smooth batter.
- Heat the oil in a large saucepan or deep fryer until a thermometer reads 350 degrees F (175 degrees C).
- Dip the onion rings evenly into the batter, then fry in the oil for 2 to 3 minutes, working in batches if necessary, until the onion rings are golden brown. With a slotted spoon, remove the onion rings to paper towels to drain. Serve hot.

Steps:
- Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
- Cut the onion crosswise into ½-inch (1 cm) slices and gently push apart each layer to get individual rings. Set aside.
- In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate large bowl. Add the flour to a third large bowl.
- Dredge the onion rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
- Arrange the onion rings on the baking sheet.
- Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
- Serve with your favorite dipping sauce.

- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

- Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
- In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
- Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
- Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.

- 1. Peel the onions and and cut them into 1/2-inch-thick slices. Separate the onions into rings. Discard the inner center pieces, which are too small, or reserve them for another purpose. You will need three bowls for breading the onion rings. In the first bowl, place two cups of the flour. Pour the buttermilk in the second bowl. In the third bowl, combine the remaining two cups of flour with the cornmeal, masa harina, paprika, salt, cayenne, thyme, and black pepper. Line two baking sheets with parchment or wax paper. As you bread the onion rings, use one hand for dry ingredients and one hand for wet ingredients to avoid a gloppy mess on your hands. In batches, dip the onions in flour, then buttermilk, and then seasoned flour mix. When necessary, to keep the flour clean and easy to work with, sift the seasoned flour mix and discard any clumps of batter. Place the breaded rings on the baking sheets and place the sheets in the refrigerator for one hour to set. 2. Heat a straight-sided pan with at least two inches of oil, no more than halfway up the sides, to 350-degrees, checking with a deep-fry thermometer. Fry the onion rings without crowding them until golden yellow, then drain on paper towels. The onion rings should be light in color; be careful because the cornmeal can burn if you fry them too long. Season to taste with salt and serve immediately. (If you are frying the onion rings in batches, you can hold them on a baking sheet in a pre-heated 350-degree oven while you finish frying all of them. But don't leave them in the oven too long, or they will get soggy.)
