MASHED BANANA FRITTERS
It's a popular Malaysian snack that's traditionally deep-fried, but here I am pan-frying it in a smidgen of butter or cooking oil. That works too and it's way healthier. ^_^ Children love it, too, as it's mildly sweet. Great as an afternoon snack with a mug of coffee or tea.

Steps:
- Mix the flours, baking powder, soda, salt and sugar in a bowl.
- Stir it into the mashed banana with a fork. (Add the fourth tbs of flour if mixture is too soft.).
- Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried but I find it not all that necessary.).
- Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot (a soft sizzling sound when the batter touches it). Flatten the batter slightly.
- Fry one side till medium brown and flip over to fry the other side.
- Place cooked fritters on a few layers of kitchen paper. Best served warm but cooled is good, too. :).

- In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Combine bread crumbs, coconut, sugar, and cinnamon together in a bowl. Beat egg white in a small bowl until frothy. Dip each banana piece in egg white and press into bread crumb mixture. Place the breaded bananas on prepared baking sheet; do not stack.
- Bake in preheated oven until golden brown, about 10 minutes.

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

MA'S SECRET JAMAICAN BANANA FRITTERS
My Ma (grandma) has been making these banana fritters for me all my life and she's never given the recipe out to any one but me! Others in the family have tried, but they just don't come out the same. Even though these are probably really fattening, I love to eat them in moderation throughout the year because they're so addictive! Plus, it's a great way to get dh and the kids to eat a fruit!

- Peel bananas and place into a large bowl. Smash them with a fork until they start to get somewhat runny. Add sugar, vanilla, milk, salt, and flour and mix until the "batter" just barely runs off of the spoon (just a little thinner than the consistency of pancake batter). If it is too thick, it will be too airy, like pancakes.
- Heat oil in a frying pan on medium heat.
- Once the oil is HOT, drop tablespoons of the batter in at a time, as if you were making mini pancakes.
- When the edges are firm, turn over and cook the opposite side. The fritters should be a medium-brown color, not light and not burnt. Drain onto paper towels and serve warm. Mmm -- .

- In a mixing bowl, mash the bananas with the sugar, salt (if using), flour and coconut cream into a sticky, slighty moist batter.
- Heat the oil in a wok or large saucepan until very hot (365 degrees).
- Using very moist fingers, pinch about 1 heaped tablespoons of the batter, roll it into a ball and glenty lower it into the hot oil Deep-fry for 3 to 5 minutes, turning occasionally , until crispy and golden brown on all sides. - In a medium bowl, whisk all ingredients except bananas, until well blended.
- Peel and slice bananas in half lengthwise. Cut each half into three pieces.
