Steps:

  • Butterfly the steaks by slicing them horizontally from 1 long side to within 1/2-inch of the opposite side. Pound the steaks between plastic wrap to flatten them further. Trim off all the sinew and fat.
  • Lay 1 steak cut side up on a jelly-roll pan. Sprinkle the steaks with the vinegar, garlic, and thyme. Cover and marinate, refrigerated, for 3 hours.
  • Preheat oven to 375 degrees F.
  • Lay the steaks end to end, in the direction of the grain of the meat, so that they overlap. Pound the overlapping area to join them securely. Spread the spinach leaves evenly over the meat and arrange the carrots across the grain of the meat in parallel rows about 3 inches apart. Place the eggs between the carrots. Scatter the onion rings over the meat, sprinkle with parsley, salt, and pepper.
  • Carefully roll the matambre with the grain, jelly roll style, into a thick long cylinder. Tie with butcher's twine at 1-inch intervals. Place the matambre in a large casserole or roasting pan along with the beef stock. Add enough cold water to come a third of the way up the roll. Cover tightly and bake 1 hour.
  • Serve warm or chilled, sliced into 2-inch thick slices.

1/2 cup red wine vinegar
1 teaspoon finely chopped garlic
1 teaspoon chopped fresh thyme
1/2 pound fresh spinach, washed and drained
8 carrots, peeled, cut into 2-inch pieces cooked in boiling salted water
4 hard boiled eggs, cut into quarters lengthwise
1 large red onion, sliced into rings
1/4 cup chopped fresh Italian parsley
Salt and pepper
3 cups beef stock
1 to 3 cups cold water

Steps:

  • Preheat a pizza stone or baking steel in the oven to 500 degrees F or as high as your oven will go for 1 hour before baking.
  • Place the tomatoes in a large mixing bowl and crush by hand to break down into small pieces, or pulse in a food processor until the tomatoes puree into a chunky sauce. Be careful not to over mix. (This will make more sauce than needed for one pizza.)
  • Spread approximately 1/2 cup of sauce on the pizza crust and evenly sprinkle with a generous pinch of salt. Drizzle with the heavy cream and olive oil. Top with whole fresh basil leaves.
  • Bake until the crust is golden brown, 8 to 10 minutes. Remove from the oven, slice into 6 pieces, top with shaved Parmigiano-Reggiano and serve.
  • Combine the flour and yeast in the bowl of a stand mixer with a dough hook. Add 1 3/4 cups of the water (reserving 1/4 cup to add if necessary) and mix on low speed for 1 minute. Add the salt and continue to mix for another 3 minutes, adding reserved water if the dough seems dry.
  • Let the dough rest for 10 minutes, then mix again on medium-low speed until the dough no longer sticks to the side of the bowl, about 2 minutes. The dough should still be tacky to the touch, but not too wet and sticky that it does not hold its shape.
  • If the dough is still too dry, slowly add water 1 tablespoon at a time. If it is too wet, gradually mix in flour by the tablespoon until you reach the desired consistency. Do not overmix the dough.
  • Transfer the dough to a well-floured counter and begin to gently roll the dough into a ball. Using a sharp knife, cut 6- or 9-ounce pieces and form into a tight ball (6-ounce dough ball for a 10-inch crust and 9-ounce dough ball for a 12-inch crust).
  • Place the dough balls on a baking sheet covered in olive oil or cooking spray to prevent them from sticking to the sheet. Brush the dough balls with additional olive oil. Cover the dough balls in plastic wrap and let sit at room temperature for 30 minutes. Then place the dough balls in the refrigerator and let them rest 24 hours.
  • The next day, remove the dough balls and let sit at room temperature for 1 to 2 hours prior to making pizzas.
  • Push out the dough by hand or use a rolling pin until you reach the desired shape. Place the crust onto a well-floured pizza peel and top. Yield: 5 to 6 crusts

  • If using raw, uncooked steak, preheat a grill or grill pan to medium high heat. Lightly oil the grill with olive oil. Brush both sides of the steak with olive oil and season generously with salt and pepper. Place steak on gill and grill about 4 minutes. Flip steak, top with provolone cheese, sliced tomatoes, and season with fresh oregano, salt, pepper. Sprinkle on mozzarella cheese. Cover with inverted, heat-safe dish or bowl and grill for an additional 3-4 minutes or until cheese is melted and bubbling. Remove from grill and let rest for 5 minutes before slicing.
  • Microwave: Put steak in microwave safe casserole dish or baking pan. For every 8 ounces of steak, pour 4-5 tablespoons of beef stock over the steak. Cover with plastic wrap and punch holes in plastic film with a fork. On medium power, microwave in 30 second bursts until desired temperature is reached. Melt together 1 tablespoon butter and 1 tablespoon olive oil on stovetop in skillet. Take steak from microwave, shake off excess liquid, and sear in medium-heat skillet, roughly 2-3 minutes per side. On second flip, add tomato, oregano and cheese. Spoon 1 tablespoon of water or beef stock around the topped steak. Cover with metal bowl or inverted, oven safe vessel until cheese is melted. Remove from heat, and serve.
  • Oven and stovetop: Preheat oven to 250°F. Put steak on a wire rack on top of a sheet pan. When oven heated, put steak in middle rack. On bottom of rack, below steak, in any oven safe vessel, put 1-2 cups of beef stock and a few pinches of black pepper. Let steak cook (if using a thermometer, look for an internal temperature of 110°F for medium-rare).
