MAW-MAW'S PERSIMMON COOKIES
My neighbor shared her persimmons from her yard, along with her family recipe for these wonderful cookies. They are heavy and soft; perfect for dunking in a glass of cold milk or a cup of hot coffee!

Steps:
- 1. Bring the butter and egg to room temp. Beat the soft butter and sugar in deep mixing bowl 'til light. Add egg, beating very well. Add the vanilla and spices. Mix well. The batter will be very runny at this point.
- 2. Add the flour, baking powder and salt, one cup at a time. Mix well. Fold in the raisins, nuts and the candied fruit (if using these additions). Be sure to mix it very well.
- 3. The dough will not be thick enough to roll out (like sugar cookies dough). Drop cookie dough by the teaspoon onto a parchment lined cookie sheet. Bake at 375 degrees 10-12 minutes.
- 4. Watch the cookies very carefully! They tend to burn on the bottom due to the high sugar content. They can be iced with a thin glaze after cooling, but really don't need anything else! That would be akin to guilding the lily!
DATE-FILLED SHORTBREAD COOKIES (MA'AMOUL)
Some say ma'amoul, a popular Middle Eastern cookie stuffed with date puree, is a reminder that at the end of the fasting period, there's a sweet reward. Stamped with geometric designs, they make beautiful edible gifts.

Steps:
- Dough: In a small bowl, stir yeast and 1/2 teaspoon sugar into warm water; let stand until bubbly, about 5 minutes.
- In a large bowl, whisk together flours, mahleb, salt, mastic, and remaining 1/2 cup sugar. Gently mix in clarified butter until it is absorbed. In a small bowl, stir together yeast mixture and milk. Drizzle over flour mixture; using your hands or a rubber spatula, knead just until dough comes together and is moist but not wet. Cover; let stand at room temperature 2 hours.
- Filling: Meanwhile, pulse dates, butter, water, sugar, cinnamon, mahleb, and anise seeds in a food processor until a smooth paste forms. Cover and let stand until dough has rested.
- Preheat oven to 350 degrees. Using a 1 1/2-inch ice cream scoop, scoop 1 heaping tablespoon of dough; roll into a ball. Press dough in the palm of your hand to form a well in the center. Place 1 scant teaspoon of filling in well. Pull up sides of dough to enclose, adding more dough if necessary. Firmly press dough into a ma'amoul mold. Invert mold; tap to release dough onto a parchment-lined baking sheet. Repeat with remaining dough, spacing about 1 inch apart. Refrigerate about 1 hour.
- Bake until beginning to turn golden around edges, 14 to 17 minutes. Transfer sheets to a wire rack; let cool completely.
SOUTHERN IRON SKILLET BUTTERMILK CORNBREAD
A skillet of hot cornbread out of the oven really brings back childhood memories. I can see my grandmother making it right now. It is so good with a bowl of pinto beans or anything.!!!

Steps:
- 1. Preheat the oven to 375 degrees. Next mix dry ingredients together.
- 2. Next add 2 beaten eggs, 1 cup of buttermilk and bacon grease.
- 3. Start mixing all of the ingredients together and add more buttermilk as needed. This is a thick batter, don't make it too thin.
- 4. Take an 8" or 10" skillet and heat 2 tablespoons of oil in it. When it is hot, pour the batter into the skillet and bake for about 40 minutes. Check it at 30 minutes. When it is nice and golden and a toothpick comes out clean, it is done.
SKILLET DATE COOKIES
I got this recipe from my younger sister. She calls them Angel Cookies. The filling will be very hot so use caution when rolling. I love them because they are sweet, chewy and crispy.
