MEATLOAF SANDWICHES
Sharp cheddar and horseradish give our meatloaf sandwiches extra punch.

- Preheat oven to 375 degrees. In a small skillet, heat oil over medium; add onion and cook until softened, about 5 minutes. Add tomato paste and cook, stirring constantly, until brick-red in color and fragrant, 3 minutes. In a large bowl, combine beef, onion mixture, crackers, cheese, eggs, horseradish, Worcestershire, salt, and pepper.
- On a parchment-lined baking sheet, use your hands to form mixture into a 9-inch loaf. Bake until cooked through, about 40 minutes. Let rest 15 minutes before cutting into thick slices. To serve, place meatloaf slices between bread, topped with lettuce, pickles, and ketchup.

FRIED MEATLOAF SANDWICH WITH GREEN TOMATO JAM

- You will need two 8-by-8-inch pans or similar. In the first, combine the flour, baking powder, pepper, salt and cumin. In the second, whisk together the egg and milk.
- Dip each meatloaf slice into the egg mixture; shake off any excess. Then coat in the flour mixture; again, shake off the excess. Place on a wire rack.
- Fill a large cast-iron skillet with 1/4 inch of coconut oil. Heat over medium heat until the oil reaches 325 degrees F. Add the dredged meatloaf; cook until golden brown on both sides, about 4 minutes per side. Drain on a wire rack and let cool.
- Build the sandwich in this order: bread, mayonnaise, meatloaf, lettuce, green tomato jam, bread, smile! Just kidding¿a smile isn't in the recipe; however, if you make it to this step, you will surely provide the smile!
- Add the green tomatoes and garlic to a food processor. Blend to a paste, then transfer to a medium saucepan along with the sugar, rice wine vinegar, soy sauce, cardamom and ginger. Stir to combine. Cook over medium-low heat until the mixture begins to look thick and glossy, about 35 minutes; stir frequently with a heat-resistant spatula to keep the jam from scorching on the bottom. Remove from the heat and let cool. Store, covered, in the refrigerator for up to 2 weeks.
MEATLOAF GRILLED CHEESE SANDWICH
This grilled cheese and meatloaf sandwich has crisped cheese on the outside and warm melted cheese on the inside. Perfect with sliced pickles and extra ketchup for dipping.

- Place meatloaf on a microwave-safe plate; cook in the microwave on High, 30 seconds at a time, until heated through.
- Melt margarine in a non-stick skillet over medium heat. Place both bread slices in skillet over melted margarine. Build sandwich on bread slice in this order: ketchup, 1 slice Cheddar cheese, warm meatloaf slice, and mustard. Flip second slice of bread over onto sandwich; cook until bottom of sandwich is lightly browned, about 2 minutes.
- Flip sandwich with a spatula and place 1 slice Cheddar cheese on top; continue cooking until cheese melts slightly, about 1 minute. Flip sandwich over and lay remaining slice of cheese on top; cook until cheese on the bottom of sandwich is melted and crisp, about 2 minutes. Turn sandwich over; cook until cheese is melted and crisp, about 2 minutes.

TOMATO, CHEESE, BASIL TEA SANDWICHES
This is a dainty tea sandwich that is just delicious. Instructions are so that you will get two rounds out of one piece of bread, but if you can't, use a larger cookie cutter, but you will need more bread to make eight little sandwiches. These little ones are not open-faced but have a cover on them.

- Cut 16 small rounds of bread (to make 8 sandwiches) with a round cookie cutter--should be able to get two out of each piece of bread, otherwise, use a larger cutter and more bread.
- Spread one of the rounds with a little butter and then a little mayonnaise.
- Top each with a slice of tomato, cheese round, and a couple of basil leaves (each should fit the bread round).
- Lightly salt and pepper each one and put a couple of drops of olive oil on top.
- Place other bread round on top.
- Refrigerate till ready for the tea.
MEATLOAF SANDWICH
These sandwiches are perhaps the best excuse for making extra meatloaf. Ketchup can be used in place of the tomato jam.

- Toast bread. Spread the slices with tomato jam; layer half the slices with tomato, meatloaf, and lettuce. Top with second slice, tomato-jam side facing down; cut in half. Serve.

- In a medium bowl mix the sauce ingredients (mayonnaise through pepper) together with a spoon. Set aside.
- Cut the meatloaf into 8 thick slices.
- Spread softened butter on both sides of each slice of bread.
- In a large frying pan "grill" each slice of bread on both sides until golden brown.
- Then "grill" each meatloaf slice on both sides, in the same frying pan until browned nicely. (You may have to do this a few slices at a time.).
- Top one side of grilled slice of bread with some of the sauce. Place one slice of meatloaf on top of the sauce. Place sliced tomato, onion and lettuce on top. Top with more sauce, then another slice of grilled bread and serve.
