Steps:
- Cook the fettuccine in salted water with the butter until not quite al dente.
- Drain and set aside.
- Combine sauce ingredients in a saucepan and bring to a boil. Add cooked fettuccine and drained shrimp. Stir gently, over medium heat for about 10 minutes, or until seafood is cooked through and dish has a creamy consistency. It may seem thin at this point but just wait. It will thicken up.
- Serve at once.

- Add red pepper flakes and garlic, cook for 1 minute.
- Add shrimp, stir and cook until done.
- Top with cheese.
- The second recipe is the same with 2 variations: add in just enough alfredo sauce to lightly coat the mixture and chunks of roasted garlic. Serve over fettucini noodles.

MEDITERRANEAN SHRIMP
This was a favorite pasta dish served in one of the Legal Seafood Restaurants in Massachusetts. The feta cheese and Kalamata olives offer their own saltiness, so please gauge accordingly.

Steps:
- Heat 2 TBSP of the olive oil in a large nonreactive skillet.
- Add the garlic, onions, and scallion; saute over medium heat for 2 minutes, stirring frequently.
- Stir in tomatoes: cook over high heat for 5 minutes.
- Stir in the wine and cook 1 minute longer.
- Remove from heat and scrape into a large bowl.
- Stir in half of the feta cheese and set aside.
- Meanwhile, Cook bowtie pasta according to package directions, al dente.
- Remove from heat and drain.
- In the same pan the sauce was prepared, heat the remaining TBSP olive oil.
- Add shrimp, and saute over medium-high heat until cooked through, about 2 minutes.
- Add chopped olives ans the sauce.
- Lower the heat and cook 1 minute.
- Stir in remaining feta cheese, the butter and the freshly ground black pepper.
- Toss the sauce with the pasta and garnish with remaining whole olives.

Steps:
- Melt butter in 3-quart saucepan over medium heat. Add garlic and cook one minute. Add remaining spice and tomato ingredients, stir well and simmer for 10 minutes.
- Meanwhile, in a large saute pan, melt 2 tablespoons butter. Saute vegetables about 3 minutes until crisp - tender. Add to the sauce and simmer 5 minutes more.
- Cook pasta according to directions. When pasta is almost done, stir shrimp into sauce to heat through. Do not boil. Spoon Primavera over hot linguine. Pass Parmesan cheese.

- Cook the pasta in salted boiling water according to package (about 9 minutes). Reserve a little bit of the starchy pasta cooking water. Drain the pasta well.
- While the pasta is cooking, cook the shrimp. In a large pan heat 1 tablespoon extra virgin olive oil over medium-high heat until the oil is shimmering but not smoking. Cook the shrimp on each side for 2 to 3 minutes until it turns pink. Transfer the shrimp to a side plate for now.
- In the same pan add a little more extra virgin olive oil, if needed. Reduce the heat to medium-low. Add the onions, garlic, oregano and red pepper flakes (I used Aleppo-style pepper). Cook for 1 to 2 minutes, stirring constantly. Add the wine to the pan and scrape up any pieces of garlic and onions. Cook the wine for 1 minute to reduce then add the lemon juice and lemon zest.
- Add the chopped parsley and tomatoes, toss about for about 30 to 40 seconds. Season with Kosher salt.
