Phyllo Dough Pizza image

Steps:

  • Butter a baking sheet with a brush. Lay down one layer of dough and brush with butter. Repeat process until all dough is layered and buttered. Fold in sides of rectangle to form a crust. Top with onions, olives, tomatoes and cheese. Bake at 375 for 30 minutes or until phyllo crust is golden brown.

6 layers of phyllo dough
1/2 cup sliced, pitted black olives
1 stick butter, melted
3 ripe tomatoes, thinly sliced
2 cups caramelized sliced onions
3/4 cup grated Parmesan cheese

Tomato-Onion Phyllo Pizza image

Steps:

  • Preheat oven to 375°. Brush a 15x10x1-in. baking pan with some of the melted butter. Unroll phyllo dough; cut stack into a 10-1/2x9-in. rectangle. Discard scraps., Line bottom and sides of prepared pan with 2 sheets of phyllo dough (sheets will overlap slightly). Brush with butter and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers 5 times. (Keep dough covered with a damp towel until ready to use to prevent it from drying out.) , Top with layers of remaining phyllo dough; brush with remaining butter. Sprinkle with mozzarella cheese; arrange onion and tomatoes over cheese. Sprinkle with oregano, thyme, salt, pepper and remaining Parmesan cheese. Bake until edges are golden brown, 20-25 minutes.

1 cup shredded part-skim mozzarella cheese
1 cup thinly sliced onion
1 pound plum tomatoes, sliced
1-1/2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
Salt and pepper to taste

Mediterranean Phyllo Pizza image

Steps:

  • Preheat oven to 375 degrees.
  • Take 3 sheets of phyllo and lay out on counter.
  • Pour a little oil on your hands and pat sheets.
  • Begin to lay sheets on a pizza pan in a diagonal fashion to begin to make a circle.
  • Repeat until all sheets are used and the circle is complete, covering the pan totaly.
  • Take 1/2 cup of the feta and place on the edge of the pan in a ring.
  • Fold over the phyllo tips to cover the cheese.
  • Set aside.
  • In a medium skillet heat 1 T of olive oil over medium high heat and saute the onion and garlic.
  • Cook for 5 minutes stirring frequently.
  • In a large bowl mix the onion and garlic with the remaining ingredients.
  • Evenly spread ingredients on the prepared phyllo.
  • Drizzle with a small amount of olive oil.
  • Bake for 20 to 25 minutes or until edges are golden brown.

1 -2 pepperoncini pepper, sliced thin

Steps:

  • Preheat oven to 425°. Prepare pizza dough according to package directions. With floured hands, press dough onto a greased 12-in. pizza pan. , Drizzle 1 tablespoon olive oil over dough and sprinkle with sliced garlic. Bake until crust is lightly browned, 10-12 minutes. Top with tomato and fresh mozzarella; bake until cheese is melted, 5-7 minutes longer. Drizzle with remaining 1 tablespoon olive oil and top with basil. Serve immediately.
