CREAMY MANGO DESSERT

Get a doubly mango-y and creamy dessert when you combine mango flavor gelatin, cold mango nectar and smooth cream cheese.

Creamy Mango Dessert image

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in cold nectar. Remove 1-1/2 cups of the gelatin; set aside for later use. (Do not refrigerate.) Pour remaining gelatin into 8 individual dessert dishes. Refrigerate 1 hour or until set but not firm. (Gelatin should stick to finger when touched.)
  • Beat cream cheese in medium bowl until creamy. Gradually add reserved 1-1/2 cups gelatin, beating until well blended. Spoon over gelatin in dishes.
  • Refrigerate 2 hours or until firm. Store leftover desserts in refrigerator.

MEILING'S MANGO CREAM

This is DELICIOUS and people always want the recipe. I got the recipe in a cooking class taught by Meiling Dawson @ Orson Gygi. It's very similar to the recipe http://www.food.com/recipe/mango-coconut-ice-cream-vegan-237611. But this one is a topping for vanilla ice cream, and that one is thickened and made into ice cream.

Meiling's Mango Cream image

Steps:

  • Peel mangos and cut fruit from pit.
  • Puree all ingredients except one mango in food processor.
  • Refrigerate 1 hour or more.
  • Serve a generous portion over vanilla ice cream as well as remaining fresh, chopped mango. I triple the recipe for a dinner party -- which is enough for about a gallon of ice cream.

Steps:

  • Peel the mango and slice off the flesh. Put into the food processor along with the rest of the ingredients and blend. Pour onto a large shallow tray and freeze overnight (if it is frozen in a deep container it can go a bit too solid).
  • To serve, shave with an ice-cream scoop or fork into tumblers.

The Mango cream is key to these, so don't forget to dunk them! Be careful not to cut the pieces too large, it is raw chicken and must be cooked through, so if you cut them to large the coating will burn.

Caribbean Coconut Chicken Bites With Mango Cream image

Steps:

  • Mango cream:.
  • Place the mango in a mini food processor and pulse till it is a pulp.
  • Scrape all of this into a bowl adding the sour cream, sugar, and extract. Mix well and set aside. Do not refrigerate this, it is best served at room temperature.
  • For Chicken -- in a bowl place 1 cup plus 2 T flour and set aside.
  • In another bowl place the remaining flour (1 cup plus 2 T), sugar, and salt.
  • Stir milk and extracts into this. The mixture should resemble a thin pancake batter (you may have to add a little more milk).
  • Set this aside.
  • Place the bread slices in a food processor and pulse till you have fine crumbs, measure out approx 1-1/2 cups.
  • Place these on a pie pan and place in a 350°F oven till lightly toasted and dried out.
  • Mix toasted bread crumbs in a third bowl with the coconut.
  • Preheat a deep fryer with oil according to the directions of the fryer.
  • Place a cooling rack on a large cookie sheet and cover the rack with paper towels.
  • Now one at a time drag each chicken bite through the pan with just flour, then using a slotted spoon drop it into the milk mixture coat well and use the spoon to retrieve it.
  • Drop the coated bite into the coconut mixture being careful not to get to much of the excess wet mixture into the coconut. cover evenly with the coconut mixture and set on a second cookie sheet.
  • After all the chicken pieces are ready begin to cook them in the hot oil. Just do a few at a time to keep your oil from cooling to much and becoming gummy. The heat time will vary a great deal on this because it is raw meat and it depends on how big of chunks you make them. Make sure they are cooked completely, you may want to test the first one out and see how long it takes to get it done thoroughly.
  • I cook mine for approx 5 minutes and the batter should turn a nice golden brown.
  • Remove from oil and drain on the cookie sheet that has been prepared with paper towels. Serve with mango cream.

Mango Cream image

Steps:

  • Peel mangoes and cut flesh from pit; finely dice half of the fruit.
  • In a blender or food processor, puree remaining fruit, lemon juice, and 1/4 cup sugar.
  • In a bowl, beat egg whites until soft peaks form. Beat in remaining 1 Tablespoon sugar and salt until stiff but not dry. In another bowl, whip cream until stiff. Gently fold beaten egg whites into whipped cream. Fold in mango puree, then fold in diced mango. Spoon into a serving bowl or individual dessert dishes; refrigerate 30 minutes. To serve, decorate with chocolate.
  • Variation: As an interesting change of flavor, substitute freshly squeezed lime juice for the lemon juice. The delicate lime flavor blends well with mangoes.
