BLUEBERRY SMOOTHIE RECIPE
Make a quick and simple blueberry smoothie with yogurt, banana and apple juice for busy mornings. You can easily make it vegan by using coconut yogurt

Steps:
- Put the blueberries, banana, yogurt, apple juice and mint, if using, in a blender and blitz until smooth. Add a splash of water if it seems too thick.
- Pour the smoothie into a tall glass with a glass straw to serve. Garnish with a sprig of mint, if you like.

This recipe came to me by way of my sister Debbie. A great breakfast muffin that we enjoy with a cup of tea on a late Sunday morning or any time.

Steps:
- Cream shortening, sugar and egg yolks.
- Sift flour, baking powder& salt together& add to creamed mixture alternately with milk.
- Fold in egg whites& vanilla.
- Add floured blueberries.
- Line muffin tins with muffin cups.
- Fill 2/3 full.
- Sprinkle with sugar.
- Bake 20- 25 minutes in 350 degree oven.

Had some cantelope at the very, very ripe stage. Paired with the frozen blueberries and some blueberry yogurt, it provided a very refreshing and good for you morning refreshment. Hope you like it!

- Place cantelope, blueberries, and yogurt in blender. Blend on low speed. Add soymilk, as needed, to obtain your personal smoothie consistency. We found that we didn't need additional liquid, as the cantelope supplied enough for us. Hope you enjoy as much as we did.
