MELROSE TARTS
This is a traditional Scottish recipe from the town of Melrose in the county of Angus. It is made with locally abundant ingredients (honey and ginger) and neighbouring Dundee's world-famous marmalade. Since I am posting this recipe at the request of a member and have not personally made it, I am assuming that the number of tarts that the recipe will produce is dependant on the size of the pie tins used. I am also taking a guess at the number of servings.

Steps:
- Preheat oven to 350° F.
- Roll out the pastry, and line small pie tins or large muffin tins.
- Trim the edges and reserve the extra pastry.
- Sprinkle the breadcrumbs evenly over the pastry base.
- Warm the honey and marmalade very gently in a saucepan over a very low heat.
- Stir in the lemon juice and ginger.
- Pour the mixture over the breadcrumbs.
- Roll and cut the leftover pastry into small rounds to cover the individual tarts.
- With a sharp knife, make a small slit or two in the top of each one.
- Bake for 25 to 30 minutes until golden brown.
- Serve hot or cold with whipped heavy cream.

Steps:
- Cut apples lengthwise in half, then cut each half crosswise into 15 thin slices.
- Cook water and 2 Tbsp. honey in medium saucepan on medium heat 2 to 3 min. or until heated through. Add apples; stir. Cover; simmer on medium-low heat 5 to 8 min. or just until apples are softened, stirring occasionally. Drain apples; spread onto rimmed baking sheet. Cool completely.
- Heat oven to 350ºF. Melt chocolate as directed on package. Mix with Neufchatel until blended.
- Unfold pastry sheet on lightly floured surface; cut crosswise into 6 strips. Spread with Neufchatel mixture. Arrange 5 apple slices, overlapping slightly, down one long side of each pastry strip, extending tops of apple slices slightly over top edge of pastry strip.
- Spray 6 muffin pan cups with cooking spray. Roll up each pastry strip, starting at one short end. Stand, apple sides up, in prepared muffin cups.
- Bake 40 to 45 min. or until golden brown. Cool slightly.
- Microwave remaining honey in microwaveable bowl on HIGH 10 sec. or just until warmed; brush onto tarts.

MOUSSE TARTS
Rich white chocolate and whipped cream combine in these fast-to-fix berry-topped treats. Although the tarts originally called for dark chocolate, I prepare them with white chocolate. I double the recipe when I'm asked to bring a dessert to special events. They're always a hit.

- In a microwave, melt white chocolate; stir until smooth. Cool for 1 minute, stirring several times. Meanwhile, in a small bowl, beat cream until stiff peaks form; set aside. , In another small bowl, combine the milk, vanilla and melted chocolate. Add half of the whipped cream; beat on low speed just until combined. Fold in remaining whipped cream. Spoon into tart shells. Garnish with raspberries and mint.

MINI QUICHE 4 WAYS
Many nights, I have about a half serving of vegetables left over. What do you do with a couple of tablespoons of cooked broccoli or spinach no one had room for at dinner? What about that odd slice of ham, or the extra slice of prosciutto that you didn't need for a recipe? Here's a way to use up lots of little "extras" and jazz up your weekend brunch.

- Preheat the oven to 375 degrees F (190 degrees C). Line a 12x18-inch baking sheet with parchment paper.
- Place tart shells on the prepared baking sheet and prick the sides and bottoms with a fork.
- Bake in the preheated oven for 8 minutes. The partial cook will help keep the pastry crispy on the bottom. Allow shells to cool slightly, in the pan, about 10 minutes.
- To make the mini-quiches: when shells are cooled but still warm, place 1 tablespoon Cheddar cheese in the bottom of 8 of the partially-baked tart shells. To 4 of the Cheddar-filled shells, add 1/2 piece of bacon, crumbled, and 1 tablespoon bell pepper. To the remaining 4 Cheddar-filled shells, add 1 tablespoon diced ham, 1 tablespoon broccoli, and 1/8 teaspoon thyme.
- Place 1 tablespoon Gruyere on the bottom of remaining partially-baked tart shells. To each of 4 of the Gruyere-filled shells, add 1 tablespoon cooked onion, 1 tablespoon of cooked, minced mushrooms, and 1/8 teaspoon garlic powder. To each of the remaining Gruyere-filled shells, add 1/4 of the diced prosciutto, 1 tablespoon cooked spinach, 1/8 teaspoon Italian seasoning blend, and a pinch of nutmeg, if using, to taste.
- Briskly stir eggs together with cream, salt, and pepper in a medium mixing bowl. Pour 1 1/2 to 2 tablespoons of the egg mixture into each of the 16 filled shells.
- Top the bacon/bell pepper mini quiches with a cherry tomato half. Top the ham/broccoli mini quiches with 1 teaspoon diced red onion. Top the onion/mushroom mini quiches with 1 teaspoon minced fresh parsley, and top the prosciutto/spinach mini quiches with 1/2 teaspoon minced fresh basil.
- Place mini quiches in the oven, and reduce heat to 350 degrees F (175 degrees C). Bake until the egg mixture is set and the crust is lightly browned, 30 to 35 minutes. Allow to cool on a rack, about 10 minutes. Serve warm.
