EASY MELT IN YOUR MOUTH BISCUITS
These little biscuits are good with country ham. This is another of my father's old recipes. I think it came from an old community cookbook. Daddy used a small biscuit cutter with a fluted edge to make them eye-appealing.

Steps:
- Stir cream lightly into biscuit mix.
- Turn dough out on a lightly floured (or use biscuit mix instead of flour) surface.
- Turn gently to coat enough so dough won't be sticky, kneading a little bit but not much as you turn it out.
- Pat out to about 1 inch thickness.
- Cut with a biscuit cutter and place on a greased baking sheet and bake 10-15 minutes in a preheated 450 degree (Fahrenheit) oven.
- Serve hot with butter or preserves or leftover ham.

Steps:
- Preheat oven to 350. Melt butter in skillet in oven. In large bowl place in biscuit mix and sour cream. Using a pastry blender, blend ingredients until they've come together. Slowly add enough 7UP until mixture forms a ball - dough will be soft and kind of puffy. Roll out onto floured cutting board. Sprinkle flour over top of dough ball.
- Pat out flour and use a biscuit cutter or rim of a glass to cut out biscuits. I like to pat out my dough to almost an inch thickness. Dip both sides of biscuits in melted butter or just place biscuits in skillet of melted butter. Bake 20 mins or until golden brown. These are very tender biscuits and rich tasting - absolutely delicious!

- Using a hand-held electric mixer (see notes), cream the butter, sugar, and vanilla until very creamy. Gradually beat in the cornstarch and flour. Continue to beat the batter until it looks like slightly overbeaten whipped cream, about 10 minutes. I always set a timer for 10 minutes as it feels like a long time.
- Drop the batter by heaping tablespoons (or 3 level tablespoons, to be exact) onto the prepared cookie sheets. Add a colored cherry or dried cranberry in the center of each cookie. Note: if you don’t have 3 cookie sheets wait until you remove the baked cookies from one and it cools completely. Putting the cookie sheets outside in the cold winter weather cools them down very quickly.
- Bake the cookies for approximately 15 minutes. You can bake two sheets at once, turning them halfway through. Remove the cookies from the oven just as they start to brown on the bottoms.
