BRUSCHETTA

This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • Heat broiler. Slice baguette down the middle and brown ever-so-slightly under the broiler.
  • In a bowl, mix tomatoes, olive oil, cilantro, garlic, red pepper and cheese.
  • Cover cut side of bread with tomato mixture. Place under broiler until the whole thing begins to brown and the cheese begins to melt-about 2 minutes.
  • Remove and slice into serving pieces.

  • Roast poblano peppers. I place mine on my gas range (over high heat) for about 2 minutes per side. Turn and ensure all of the skin is charred black. You should see hardly any green spots. If you don’t have a gas stove, you can broil yours in the oven, turning occasionally.
  • After the poblanos have steamed, use a paper towel to wipe off the charred skin. Open each poblano, remove the stem and seeds, and chop.
  • Combine chopped poblanos with remaining ingredients in bowl and mix well. Taste and adjust seasoning. Add hot sauce if desired.

  • First, make the crostini. Lay the baguette slices in a single layer on a bake sheet. Brush both sides of each with the 1 tablespoon olive oil. Toast the bread right under the broiler, watching constantly, until golden on the top side around the edges. Flip each piece over, and brown the other sides. Remove crostini from the oven.
  • Take a clove of garlic and slice in half. Rub the top side of each crostini with the cut face of the garlic clove. Set the crostini aside, but reserve the garlic clove. Add to the remaining garlic clove and mince both.
  • In a medium mixing bowl, add the minced garlic from the step above with the black beans, corn, poblano pepper, salsa, lime zest, lime juice, salt, pepper, 1 tablespoon oregano, and the remaining 2 teaspoons olive oil.
