CHEDDAR AND CHORIZO STRATA

Stratas are a wonderful way to use up bits and pieces of leftovers you have on hand. You can make them meatless or substitute the cheeses and the meats. This dish can be made a day before baking. If you like more heat, use pepper jack cheese. -Kallee Krong-McCreery, Escondido, California

Steps:

  • Place the pork, Aleppo pepper, chili powder, garlic, salt, black pepper, oregano, cumin, cloves, and coriander into a bowl, and lightly toss the pork with the seasonings until thoroughly blended. Cover the bowl, and refrigerate the meat, your meat grinder's head assembly, and grinder hopper for 1 hour.
  • Fill a large mixing bowl with ice cubes, and place a smaller metal bowl in the ice cubes to catch the ground meat. Assemble the chilled meat grinder, and grind the pork and seasonings using a coarse cutting plate. Return ground meat to refrigerator for 30 minutes. Lightly stir the ground pork with the vinegar and water until thoroughly mixed, form into patties, and refrigerate overnight, covered, to let flavors develop.
  • Heat vegetable oil in a heavy skillet over medium-low heat, and pan-fry the patties until browned and no longer pink in the middle, 5 to 8 minutes per side.

  • Cook and stir chorizo in a large skillet over medium heat until browned and crumbly, 5 to 7 minutes. Transfer to a bowl using a slotted spoon, reserving 1 tablespoon of drippings in the pan. • Whisk eggs, milk, oregano, and paprika together in a large bowl. Pour egg mixture evenly over bread and sausage. Cover and chill, 8 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake in the preheated oven, covered, for 30 minutes. Uncover and bake until an instant-read thermometer pressed into the center reads 170 degrees F (degrees C), 30 to 45 minutes more. • Brush the Poblano peppers with the olive oil and place on a foil-lined baking sheet. Set the oven control to ‘broil’ with the top rack positioned 4-6 inches from the unit. Broil the peppers for 5 minutes until the skin blisters and chars. Pull the rack out and flip the peppers and broil the second side for an additional 5 minutes until the skin is blistered and charred.
  • Transfer the baking sheet to a work space and cover with another piece of foil. Let the peppers steam and ‘sweat’ for 10 minutes. When cool enough to handle, lift the skins off and discard. Cut the peppers in half, remove and discard the seeds, veins and the stem; then slice the peppers lengthwise, into 1-inch strips. Place the strips on a plate and reserve until needed.
  • To the bowl of a food processor or blender, add the eggs, milk, cream cheese, salt, pepper, aioli and cumin. Pulse the mixture until smooth. Set aside.
