AUNT MARY'S IMPOSSIBLE MEXICAN PIE
Family favorite from our Aunt Mary's kitchen. My children love this recipe. It is a regular in our house.

Steps:
- Heat oven to 400 degrees.
- Lightly grease 10 inch pie plate.
- Cook and stir ground beef and onion in 10 inch skillet until brown; drain.
- Stir in seasoning mix.
- Spread beef mixture in pie plate.
- Sprinkle with chilies and cheese.
- Beat remaining ingredients until smooth.
- Pour in pie shell.
- Bake 25 to 30 minutes.
- Let stand 5 minutes before cutting.
- Garnish with peppers and cheese.
MEXICAN SHEPHERD'S PIE
This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. Mix in the tomatoes, and cook 5 minutes. Stir in the taco seasoning and water. Bring to a boil, reduce heat to low, and continue cooking 5 minutes, until thickened. Transfer to the prepared baking dish, and top evenly with corn.
- Prepare the corn muffin mix according to package directions. Spread evenly over the corn layer in the baking dish.
- Bake 20 minutes in the preheated oven, or until puffed and golden. Garnish with olives and cheese.

- 1.Preheat oven to 350 degrees. 2.Using a 12-inch cast-iron skillet, cook beef with taco seasoning and broth over medium heat; drain. 3.In the same skillet, melt butter. Cook onion, garlic, and green onion in butter until tender. Add green chiles, soup, and meat, stirring well. Transfer mixture to a medium bowl. 4.Wipe skillet clean with a paper towel. Lightly spray skillet with cooking spray; set aside. 5.In a separate bowl, combine enchilada sauce and beans, whisking well. 6.In prepared skillet, layer 1 tortilla, half of meat mixture, 1 tortilla, and half of bean mixture. Repeat once more, ending with tortilla. Top with cheese. 7.Bake for 30 minutes, or until cheese is browned. 8.Garnish with sour cream, chopped green onions, and chopped tomatoes, if desired

- Heat oven to 180C/160C fan/gas 4. Warm the cumin seeds in a large pan and toast for a few secs. Tip the salsa into the pan, then stir in the mince, breaking it up with a wooden spoon. Crumble in the stock cube, tip in the beans with their juice and add a little less than a can of water. Season, then part-cover and simmer for 40 mins, stirring occasionally. If there is still a lot of liquid after 30 mins, remove the lid completely and allow it to reduce a little until thickened.
- Meanwhile, boil the potatoes until tender, then drain and mash with the butter and seasoning. Spoon the mince into an ovenproof dish and top with the potato, smoothing to cover the meat completely. Mix the cheese with the tortillas, then scatter on top of the pie and bake for 10 mins to melt the cheese - take care that the tortillas don't burn.

- Heat oil in skillet over medium high heat.
- Cook onions until translucent.
- Add garlic, taco seasoning and ground beef, cook until brown.
- Stir in green chilies.
- Preheat oven to 400 degrees.
- Lightly grease pie plate and cover bottom with 4 tortillas.
- Layer in this order: 1/2 beef mixture, 1/2 cheese, 4 tortillas, beans, 4 tortillas, chipolte peppers, 4 tortillas, remaining beef, remaining cheese.
- Bake 30-40 minutes uncovered, or until cheese is melted.
- Serve with toppings of choice (salsa, sour cream, and guacamole).
- Leave out the chipolte peppers if you do not like spice, feel free to add black beans with refried beans for extra protein, and substitute leftover chicken or turkey for the beef with ease. Double recipe to freeze ahead for a lazy or crazy day.

- Sift flour and salt.
- Cut in shortening.
- Slowly add Coke,until dough forms a ball.
- Makes about 5 single pie crusts.
- Very tender crust.
- I roll mine into 3 inch circles and place a teaspoon of filling like jam, pie filling, etc.
- fold into half and pinch and seal edges.
- Bake in preheated oven 400 drgrees for about 15 minutes.
- Roll into sugar immediately upon removal from oven.

- Cook ground beef. Drain.
- Add to the cooked ground beef: onion, green chiles, chili powder, tomato sauce, and garlic powder. Simmer 8-10 minutes.

- Beat together cheese, sour cream and egg white. Put on top of meat mixture.
