Mexican Style Tater Tot Casserole Recipes

Steps:

• In a large skillet, combine the first seven ingredients. Stir in meat mixture. Bring to a boil., Transfer to a greased 13x9-in. baking dish. Top with Tater Tots. Cover and bake at 350° for 30 minutes. Sprinkle with cheese and green onions. Bake, uncovered, 10-15 minutes longer or until bubbly and cheese is melted.

Steps:

• Preheat an oven to 375 degrees F (190 degrees C). Prepare a 9x13-inch baking dish with cooking spray.
• Cook the ground beef in a skillet over medium heat until completely browned, 5 to 7 minutes. Add the onion, garlic, taco seasoning mix, frozen Mexican-style corn, and black beans to the ground beef; cook and stir another 10 minutes. Set aside to cool slightly.
• Combine the ground beef mixture in a large bowl with about 3/4 of the Mexican cheese blend and the tater tots; stir to combine.
• Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish; lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tot layer.
• Bake in the preheated oven for 40 minutes. Sprinkle the remaining Mexican cheese over the casserole and return to oven until the cheese is melted and bubbly, about 5 minutes more.

• In a large nonstick frying pan put the oil and diced onion. Stir-fry until lightly browned and tender.
• Add the hamburger meat and break it up with a spoon as it browns, stirring frequently.
• Drain off excess oil.
• Add the taco seasoning mix and 3/4 cup water. Bring mixture to a boil and cook until most of the excess liquid evaporates.
• Stir in the corn and the cream of chicken soup.
• Check seasonings.
• Spoon the hamburger mixture into a 9 x 13 inch pan (a one-layer cake pan).
• Top with the grated cheese.
• Layer at least 1 pound of tater tots on top, putting them close together, or as desired.
• Bake 350 degrees for at least 50 minutes. The tater tots should be well browned. Start checking after 40 minutes.
