For our family's fall birthday bash, I make a big pot of this soup and serve it with plenty of oven-fresh corn bread.

- In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Garnish with cheese and sour cream if desired.

- Heat the oil in a medium pan, add the onion (reserving 1 tbsp to make the guacamole later) and pepper and fry, stirring frequently, for 10 mins. Stir in the garlic and spices, then tip in the tomatoes and beans with their liquid, half a can of water and the bouillon powder. Simmer, covered, for 15 mins.
- Meanwhile, peel and de-stone the avocado and tip into a bowl, add the remaining onion, coriander and lime juice with a little chilli (if using) and mash well. Ladle the soup into two bowls, top with the guacamole and serve.

I took one of my favorite enchilada recipes and with slight adjustment transformed it into a soup. For easy preparation I used rotisserie chicken.

- Melt butter in a saucepan over medium-high heat. Add diced onion and saute until soft and translucent, about 3 minutes. Sprinkle flour over onions and slowly pour in chicken broth, stirring to prevent any lumps from forming. Add cannellini beans, chiles, and cooked chicken. Simmer until everything is heated through, about 6 minutes. Reduce heat and carefully stir in sour cream in dollops to prevent curdling.

- Rinse beans. In a 4- to 5-quart Dutch oven combine beans and the 6 cups water. Bring to boiling; reduce heat. Simmer, uncovered, for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Drain and rinse beans.
- In the Dutch oven cook onion, celery, carrots, and garlic in hot oil until tender. Add beans. Stir in cumin, salt, and cayenne pepper. Add broth and the 2 cups water. Bring to boiling; reduce heat. Simmer, covered, for 1 to 1-1/2 hours or until beans are tender.
- Using a handheld immersion blender, blend mixture slightly. Return to Dutch oven. Finely shred 1 teaspoon peel from orange; then juice orange. Stir orange juice, peel, and salsa verde into soup; heat through. If desired, top with sour cream. Sprinkle with cilantro and cayenne pepper.

- If you’re using a slow cooker, first cook the vegetables on the stovetop or in the microwave. To microwave, combine all of the ingredients, including the olive oil, onion, celery, peppers, garlic, cumin and oregano in a large heatproof bowl, and season with salt and pepper. Microwave on high, stirring occasionally, until the vegetables are tender, about 6-8 minutes. Otherwise, heat the olive oil in a 12-inch skillet or large pot (use a pot if you're cooking the soup on the stovetop) over medium-high heat. Add the onion, celery and peppers. Season with salt and pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the garlic, cumin and oregano, and stir until fragrant, about 30 seconds. At this point you can either finish cooking the soup on the stovetop or in a slow cooker.
- If cooking on the stovetop, add the can of green chiles, beans, chicken and broth to the pot with the vegetables. Season with salt and pepper. Bring to a boil then reduce to a gentle simmer and cook for anywhere from 45 minutes to 1 1/2 hours, depending on how much time you have and/or how lazy you’re feeling (this is a very forgiving soup), or until the vegetables are tender and the soup has thickened slightly.
- If using a slow cooker, scrape the vegetables into the slow cooker, and add the can of green chiles, beans, chicken and broth. Season with salt and pepper, and stir to combine. Cook until the vegetables are tender, about 4-5 hours on low or 3-4 hours on high.
- Taste the soup and season it with more salt and pepper as needed (the beans soak up flavor, so you may need more than you think!). To serve, ladle the soup into bowls, and serve it with the toppings of your choice.

- In a large soup pot, heat oil over medium-high heat. Once oil is hot, cook onion until nicely browned, about 20-30 minutes, stirring often, and adding some water to the pot if the onion is beginning to burn. Once onion is caramelized, add carrots and garlic to the pot, and cook 5 minutes. Stir in cumin, smoked paprika, and salt.
- Add broth, water, and beans. Bring to a boil; reduce heat, and simmer, covered, for 10-15 minutes or until veggies are tender.
- Remove 1 cup of the beans and carrots, and set aside. Working in batches, transfer mixture, one-third at a time, to a blender, and blend until smooth. Or, use a handheld immersion blender to blend slightly.
- Return reserved veggies to the pot, along with the blended soup. Stir the salsa verde into soup; heat through.
