CINDY'S REALLY GOOD AU GRATIN POTATOES
This is the recipe of a friend of my parents. We loved it as kids and I've made it for my family, who also really like it.

Steps:
- Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain, and allow to cool until the potatoes are cool enough to handle. Slice into 1/4-inch slices, and place into a 1-quart baking dish; set aside.
- Preheat an oven to 350 degrees F (175 degrees C). Stir the cracker crumbs and melted butter together in a small bowl; set aside.
- While the potatoes are cooking, melt 2 tablespoons of butter in a saucepan over medium-low heat. Whisk in the flour, and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk the milk into the flour mixture, and bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth, 10 to 15 minutes. Stir in the mustard, salt, pepper, and Cheddar cheese until the cheese has melted and the sauce is smooth; pour over the potatoes. Sprinkle with the cracker crumbs.
- Bake in the preheated oven until the crackers are golden and the sauce is bubbly, 35 to 45 minutes.

Steps:
- Preheat oven to 375 degrees.
- Spray a 13 x 9 pan with oil.
- Peel and cut garlic cloves in half or thirds.
- Rub sides and bottom of dish with cut side of garlic cloves.
- Leave garlic pieces in bottom of pan.
- Layer half of potatoes in bottom of pan.
- Salt and pepper.
- Sprinkle with half the cheese.
- Pour half the cream over potatoes.
- Repeat layer.
- Bake for 60 to 75 minutes until potatoes are done.
- Push potatoes down into cream during the first 30 minutes of baking.
- If top gets too brown cover with foil.

- Spread diced potatoes in casserole dish, making a layer about 1/2 inch thick. Mix soup with milk and fold into potatoes. Fold in 1 cup of the cheese. Season with Salt & Pepper, top with remaining 1 cup cheese and the French's onions. Dot with butter and bake at 350 for 30-40 minutes. Serve!

- Heat oven to 350.
- Grease 1 1/2 quart casserole.
- In greased casserole, combine 1 cup of the cheese, sour cream, soup, thyme and pepper; mix well.
- Stir in potatoes and onion; cover.
- Bake at 350 for 45 minutes.
- In small bowl, combine crushed croutons and remaining cheese.
- Uncover casserole; sprinkle with crouton mixture.
- Bake uncovered an additional 10 to 15 minutes or until bubbly and golden brown.

- Preheat oven to 400 degrees. Lightly spray baking dish with cooking spray. In large bowl, combine soup, cheddar cheese, milk and black pepper. Add garlic and potatoes to soup mixture. Mix well.
- Spoon potatoes into baking dish; sprinkle with parmesan cheese and paprika. Cover with foil; bake 1 hour. Remove foil; bake and additional 15-20 minutes or until potatoes are tender.

CHEESY POTATOES AU GRATIN
Recipe from New Orleans Cooking by Emeril Lagasse. Simple and tasty side dish. Did add a couple of extra spices as the recipe seemed to be bland with just salt & pepper. The additions of garlic & onion powder seemed to make a difference in the layers.

Steps:
- Preheat oven to 400 degrees.
- Lightly grease a medium gratin dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes.
- Lightly season with salt, pepper, garlic powder, and onion powder and top with a sprinkling of cheese (about 2 tablespoons).
- Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
- Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.
- Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes.
- Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
- Remove from the oven and let rest 10 minutes before cutting into portions.
