MICROWAVE BAKED POTATO
If you want the yummy taste of a slowly baked potato but aren't patient enough, or don't have the know-how to bake it in an oven, this is for you. Give it 12 minutes and get a mouth-watering, taste bud-tingling treat.

Steps:
- Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
- Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
- Top with remaining cheese and sour cream, and serve.

- Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
- Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness. If the potato is not done, cook in 1-minute intervals until the fork can easily pierce the flesh. Serve with the butter and more salt and pepper.

- Pierce potato all over with a fork before placing it directly into the microwave. If cooking more than one potato at a time, make sure that the potatoes are in a single layer and not touching.
- Cook the potato for 3 to 4 minutes and then carefully flip and cook for an additional 3 to 4 minutes. For every extra potato you're cooking, add 1 minute for each side.*
- Use a knife to pierce the potato and check for doneness. The potato should feel tender (but not mushy) all the way through.
- If the potato is finished, allow it to sit for 1 minute to cool slightly before removing it from the microwave. If still hard, continue to cook in 1-minute increments until the potato is tender.
